Categories     side-dish

Time 28m

Yield 6 servings

Number Of Ingredients 8

1/4 cup salt
4 cups water
2 pounds assorted wild mushrooms, stemmed
4 cups white wine vinegar
1 tablespoon toasted coriander
2 jalapenos
2 fresh bay leaves
1 tablespoon toasted mustard seed

Steps:

  • Mix the salt and water, and pour brine over mushrooms. Let mushrooms sit in the refrigerator, covered for 24 hours.
  • Remove mushrooms from brine, rinse, and then lay them out on paper towels to dry. In a saucepan, mix the vinegar with the remaining ingredients and bring to a boil.
  • Place mushrooms in sterilized jar and cover with hot liquid. The mushrooms will be ready to eat in 1 week and will hold in cool place for up to 1 year. These are great for salads or as a garnish for meat dishes.

Tips:

  • Choose the right mushrooms: For pickling, choose firm and fresh mushrooms with no blemishes or signs of decay. Smaller mushrooms are ideal as they absorb the pickling solution more easily.
  • Clean the mushrooms thoroughly: Before pickling, clean the mushrooms with a damp cloth or brush to remove any dirt or debris. Do not wash the mushrooms under running water, as this can dilute their flavor.
  • Use a variety of spices and herbs: Experiment with different spices and herbs to create a unique flavor profile for your pickled mushrooms. Common additions include garlic, dill, peppercorns, and bay leaves.
  • Adjust the vinegar solution to your taste: The vinegar solution should be flavorful but not overpowering. Taste the solution before adding the mushrooms and adjust the vinegar, sugar, and salt levels as needed.
  • Let the mushrooms marinate: Allow the mushrooms to marinate in the vinegar solution for at least 24 hours, or up to several weeks. The longer the mushrooms marinate, the more flavorful they will become.

Conclusion:

Pickled mushrooms are a delicious and versatile condiment that can be enjoyed in a variety of ways. Whether you serve them as a side dish, an appetizer, or a topping for salads, sandwiches, or burgers, pickled mushrooms are sure to add a burst of flavor to your meal. With a little planning and preparation, you can easily make your own pickled mushrooms at home using a variety of simple ingredients. So next time you're looking for a new way to enjoy mushrooms, give pickled mushrooms a try!
