PICKLE ROLL UPS

My mom used to make this as a simple and addictive appetizer when I was a kid. I have NEVER seen this anywhere, but my guess is that it's a Midwestern type dish. The flavors are unusual but incredibly good. The ham should NOT be paper thin, but should instead be more thickly sliced.

PICKLE ROLL-UPS

Pickle Roll-Ups image

I have been making these since the early 1970's and they are the first appetizer to disappear when I serve them at a party. When we can afford it, pastrami is our favorite deli meat to use in this recipe.

Provided by Carolyn Chasteen

Categories     Appetizers

Number Of Ingredients 3

1 lb deli pastrami, corned beef, italian beef, or smoked ham (thinly sliced but not shaved)
8 -12 oz cream cheese, softened (do not substitute light or no-fat)
kosher or polish dill pickle wedges

Steps:

  • 1. Pat slices of deli meat dry with paper toweling and lay them out individually on a counter top. Spread a thin layer of softened cream cheese on each meat slice. Dry the Kosher dill pickles thoroughly with paper toweling and lay one wedge at the bottom of each meat slice. Roll tightly and refrigerate until cream cheese has set up again. Slice the rolls into 1/4-1/2 inch pinwheels and serve with crackers.

PICKLE ROLL UPS

These are very easy to make. I just love dill pickles.

Provided by Deborah Mackrodt

Categories     Vegetable Appetizers

Number Of Ingredients 3

1 8 oz container of cream cheese softned
8 large dill pickles
2 pkg deli meat ( ham, or roast beef ) 4oz each

Steps:

  • 1. Dry pickles off. You can use small dill pickles instead. The portions will just be smaller.
  • 2. Spread a layer of cream cheese on a slice of meat.
  • 3. Wrap the meat around the pickle. If the pickles are really large then use 2 slices of meat.
  • 4. Slice and arrange on a platter with toothpicks.

Tips:

  • Use a sharp knife to cut the cucumbers into thin slices. This will help the pickle roll-ups stay together better.
  • If you don't have a mandoline, you can use a vegetable peeler to create thin cucumber slices.
  • Be sure to pat the cucumber slices dry before assembling the pickle roll-ups. This will help prevent them from getting soggy.
  • Spread the cream cheese mixture evenly over the cucumber slices. This will help the pickle roll-ups stay together better.
  • Top the pickle roll-ups with your favorite toppings, such as dill, smoked salmon, or capers.

Conclusion:

Pickle roll-ups are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they can also be enjoyed as a light lunch or dinner. With their combination of sweet and savory flavors, pickle roll-ups are sure to please everyone.
