1/3 cup cream of coconut
1/3 cup sugar
Pinch of salt
2 large eggs, at room temperature
1/4 cup sour cream
1 teaspoon coconut extract
1 cup chopped dried pineapple
1 8-ounce can crushed pineapple in juice
2 tablespoons cream of coconut
1 tablespoon fresh lemon juice
2/3 cup water

Steps:

Let the topping cool, stirring occasionally, 30 to 45 minutes.

1/2 teaspoon ground ginger
2 tablespoons butter, melted
1 tablespoon canola oil
1 tablespoon water
cooking spray
1 cup 2% fat cottage cheese
1/2 cup sugar
1/4 cup block-style fat free cream cheese, softened
1 1/2 tablespoons grated lemon rind
1 tablespoon fresh lemon juice
1 tablespoon pineapple juice
1/2 teaspoon vanilla extract
1 dash salt
3/4 cup egg substitute
1 cup chopped fresh pineapple
1/4 cup unsweetened dried shredded coconut, toasted
