GRILLED FRUIT PHYLLO TART
This tart was a hit at my friend's baby shower. It reminds me of a fruit salad that my mother used to make with cream cheese and whipped topping. Everyone loved the flaky crust, and the bright colors make it a pretty addition to any spread. -Laura McAllister, Morganton, North Carolina

Steps:
- Preheat oven to 350°F. Place phyllo shells on a baking sheet and brush with egg white. Sprinkle with sugar and bake until golden, 8 to 10 minutes. Let cool on sheet on a wire rack.
- Spoon or pipe lemon curd into shells. Serve, decorated with blueberries and fresh mint leaves.
Tips:
- Make sure the phyllo dough is thawed completely before using. This will help prevent it from tearing when you are folding it.
- If you don't have any fresh mint, you can use dried mint instead. Just be sure to use half the amount, as dried mint is more concentrated.
- You can also add other ingredients to the filling, such as chopped nuts, raisins, or crumbled feta cheese.
- Be careful not to overcook the pastries. They should be golden brown and crispy, but not dry.
- Serve the pastries warm or at room temperature. They are best enjoyed the day they are made.
Conclusion:
These phyllo pastries with fresh cheese and mint are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they can also be enjoyed as a light meal.
