HEIRLOOM TOMATO AND GOAT CHEESE TART

Heirloom Tomato and Goat Cheese Tart image

Provided by Food Network

Categories     appetizer

Time 1h50m

Yield 10 servings

Number Of Ingredients 11

1/2 pound unsalted butter, cold, cut into small cubes
2 cups unbleached flour
Pinch of salt
3 eggs, 1 of them beaten with a little water, for egg wash
1/4 cup ice water
1/2 cup grated Parmesan cheese
5 to 6 medium-sized, different colored heirloom tomatoes, sliced fairly thin
4 to 6 ounces fresh goat cheese
1/2 cup half-and-half
Salt and pepper
1/4 cup fresh basil leaves, julienned

Steps:

  • In a food processor, combine the butter, flour and pinch of salt. Pulse until the butter is about the size of small peas. In a small bowl, mix 1 egg with the ice water. Add to the flour-butter mixture. Pulse until the dough begins to come together, but is still somewhat loose and shaggy. Turn dough out onto lightly floured board and gather together lightly and quickly into a disk. Cover with plastic wrap and refrigerate at least 30 minutes before rolling out.
  • Place dough on floured surface and roll out into large circle, about 1/8-inch in thickness. Sprinkle the bottom of the dough with 1/4 cup of the Parmesan cheese. Begin to layer the tomatoes around in concentric circles inside the dough, leaving about a 2-inch margin of dough at the edges. Sprinkle the fresh goat cheese evenly over the sliced tomatoes. Sprinkle the remaining Parmesan cheese over the top of the goat cheese.
  • In a small bowl, whisk together the remaining egg with the 1/2 cup of half-and-half. Season with salt and pepper, about 1/2 teaspoon salt and 1/4 teaspoon pepper. Fold the edges of the dough up around the tomatoes, pinching the creases as you go, but casually. Enclose the tomatoes partway to make it leak-proof. Carefully pour the custard around and over the tomatoes and cheese. Brush the dough with the egg wash. Place in 400 degree oven and bake for 30 to 45 minutes, or until golden brown. Cut the tart into 10 wedges and sprinkle wit the julienned basil. Serve

1 large leek, white part only, split, rinsed well, coarsely chopped
1 stalk celery, coarsely chopped
1 small bulb fennel, coarsely chopped
1 medium red bell pepper, stemmed, ribs removed, seeded and coarsely chopped
1/2 medium Spanish onion, coarsely chopped
1/2 bulb garlic, unpeeled, cut crosswise in half and crushed gently
1 sprig thyme, 1 sprig rosemary, 1/4 bunch parsley, 3 sprigs basil, 3/4-inch-diameter bundle of dry fennel sticks, all tied together with kitchen string
3/4-inch-diameter of dry fennel sticks, all tied together with kitchen string
1 tablespoon anise seeds, 1 tablespoon fennel seeds, 1 teaspoon coriander seeds, all placed on a thick square of cheesecloth, gathered into a bundle and tied with kitchen string
15 large, ripe Carmello or beefsteak tomatoes, each cut into 8 pieces
Salt and freshly ground white pepper to taste
Tabasco sauce to taste
Celery salt to taste
6 ounces guacamole

Steps:

  • Heat the oil in a large saucepan over medium heat, add the vegetables (but not the tomatoes). Cover and sweat for 10 minutes, until soft but not brown. • Transfer the mixture to a large heatproof bowl and cool in a container of ice and water. (This will allow the tomatoes to retain their color.)
  • Remove the bouquets garnis and, in batches, puree the mixture in a blender. Pass through a food mill into a large bowl and season to taste with salt, white pepper, Tabasco and celery salt. Refrigerate until cold (but not freezing) to taste the full flavor of the tomatoes.
  • Ladle the cold tomato soup into soup bowls and place a spoonful of the guacamole in the center and then garnish with a basil flower.

  • Microgreens are the plant's first true leaves and are exceptionally tender. The young seedlings are harvested when less than fourteen days old, often with the stems attached. The tiny leaves are exact miniatures of how they would look if left to mature. They are often very intense in flavor. Common varieties include arugula, basil, beet, collard, mustard, daikon, chard, and celery. Microgreens are available at upscale and natural grocery stores such as Whole Foods and many farmer's markets.

ENSALADA DE SANDíA Y TOMATE (WATERMELON TOMATO SALAD WITH GOAT CHEESE AND CORN NUTS)

Ensalada de Sandía y Tomate (Watermelon Tomato Salad with Goat Cheese and Corn Nuts) image

Even though this salad is all about summery from-the-farm watermelon and tomatoes, the corn nuts make the dish. Their salt and crunch accentuate the juicy sweetness of the fruit.

Provided by Katie Button

Categories     Salad     Watermelon     Goat Cheese     Tomato     Summer     Fruit     Vegetable     Vegetarian     Dairy     Cheese     Wheat/Gluten-Free

Yield Serves 8 as a small plate

Number Of Ingredients 10

1 tablespoon honey
1½ tablespoons reserve sherry vinegar
Kosher salt
¼ cup extra-virgin olive oil
¼ cup corn nuts, preferably Quicos
4 medium heirloom tomatoes, cut into wedges
4 cups 1-inch watermelon cubes
¼ cup very thinly sliced sweet onion
3 ounces goat cheese, such as Capricho de Cabra
2 tarragon sprigs

Steps:

  • Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
  • Pulse the corn nuts in a food processor until finely chopped.
  • Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the final dish. Look for tomatoes that are deep red or yellow in color, feel heavy for their size, and have no blemishes. Heirloom tomatoes are a great choice for this salad, as they are often more flavorful than hybrid varieties.
  • Slice the tomatoes thinly: This will help them absorb the dressing and flavors of the other ingredients.
  • Use a good quality olive oil: The olive oil you use will also impact the flavor of the dish. Choose an extra virgin olive oil that is fruity and flavorful.
  • Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will weigh down the salad and make it soggy.
  • Let the salad sit for a few minutes before serving: This will allow the flavors to meld together and develop.
  • Serve with a crusty baguette or crostini: This will provide a delicious way to soak up the dressing and enjoy the salad.

Conclusion:

Philippe Bertineau's Heirloom Tomato Salad with Farm Goat Cheese is a simple yet elegant dish that is perfect for a summer meal. The sweet, juicy tomatoes are complemented by the creamy goat cheese and tangy vinaigrette. This salad is sure to impress your guests and is a great way to showcase the flavors of fresh, seasonal produce.
