For the Wontons
6 ounces ground pork
8 medium shrimp, shelled and ground
1 teaspoon light brown sugar
1 tablespoon rice wine or 1 tablespoon dry sherry
1 tablespoon soy sauce
1 teaspoon finely chopped scallion
1 teaspoon finely chopped ginger
24 wonton wrappers

Steps:

  • Directions: 1. Bring chicken stock to a rolling boil, then add all the ingredients. 2. Cook until chicken and shrimp are cooked through, about 10 minutes. FOR WONTONS: 1. In a bowl, mix the pork, ground shrimp, brown sugar, rice wine or sherry, soy sauce, scallions and chopped ginger. 2. Blend well and set aside for 25-30 minutes for flavors to blend. 3. Place 1 tsp of the filling in the center of each wonton wrapper. 4. Wet the edges of each wonton with a little water and press them together with your fingers to seal, then fold each wnton over. 5. To cook, add wontons to the boiling chicken stock and cook for 4-5 minutes. 6. Transfer to individual soup bowls and serve.

Tips:

  • To make your wonton wrappers, combine 1 cup all-purpose flour, 1/2 teaspoon salt, and 1 egg in a food processor. Process until the dough comes together, then knead it on a lightly floured surface for a few minutes until it is smooth and elastic.
  • If you don't have time to make your own wonton wrappers, you can use store-bought wonton wrappers.
  • To make the wonton filling, combine 1 pound ground pork, 1/2 cup chopped onion, 1/2 cup chopped celery, 1/4 cup chopped green onions, 1 tablespoon soy sauce, 1 teaspoon salt, and 1/2 teaspoon ground black pepper in a bowl. Mix well.
  • To assemble the wontons, place a wonton wrapper on a flat surface. Add about 1 tablespoon of the filling in the center of the wrapper. Fold the wrapper up over the filling, forming a triangle. Fold the sides of the triangle up to meet the center point. Pinch the edges of the wrapper together to seal.
  • To cook the wontons, bring a large pot of water to a boil. Add the wontons and cook for 3-4 minutes, or until they float to the top of the water. Remove the wontons from the pot and drain them on paper towels.
  • To make the broth, combine 6 cups chicken broth, 1 cup water, 1/2 cup soy sauce, 1/4 cup rice vinegar, 2 tablespoons sesame oil, 2 teaspoons ground ginger, and 1 teaspoon garlic powder in a large pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add the wontons to the broth and cook for 2-3 minutes, or until they are heated through.
