I like to make sure they include both some protein and carbs, since he does heavy physical labor and needs to be appropriately refueled. I came up with this recipe, which met those requirements, and it tastes great, too! It's simple, quick, and travels well.

Whip up a tasty potato and tuna salad in less than half an hour

Time 30m

Tips:

  • For the best flavor, use fresh basil and pine nuts in your pesto. If you don't have fresh basil, you can use dried basil, but the flavor will be less intense.
  • If you don't have pine nuts, you can use walnuts or almonds instead. Just be sure to toast them before using them in the pesto.
  • To make your pesto even more flavorful, add a little grated Parmesan cheese or lemon zest.
  • Be sure to cook the tuna until it is just cooked through. Overcooked tuna will be dry and tough.
  • If you are using canned tuna, be sure to drain it well before adding it to the pasta salad.
  • Add your favorite vegetables to the pasta salad. Some good options include cherry tomatoes, bell peppers, zucchini, and asparagus.
  • Serve the pasta salad immediately or chill it for later. It will keep well in the refrigerator for up to 3 days.

Conclusion:

Pesto tuna pasta salad is a delicious and easy-to-make dish that is perfect for a summer picnic or potluck. It is also a great way to use up leftover tuna. With a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy.
