PESTO QUINOA SALAD

Pesto Quinoa Salad image

My daughter-in-law got me hooked on quinoa, and I'm so glad she did! I've been substituting quinoa in some of my favorite pasta recipes, and this dish is the happy result of one of those experiments. I love using my garden tomatoes and peppers in this salad; however, sun-dried tomatoes and roasted red peppers are equally delicious. -Sue Gronholz, Beaver Dam, Wisconsin

Tips:

  • Use fresh ingredients: Fresh basil, garlic, olive oil, and Parmesan cheese will give your pesto quinoa the best flavor.
  • Toast the quinoa before cooking: This will give the quinoa a nutty flavor and make it more resistant to becoming mushy.
  • Don't overcook the quinoa: Quinoa is done cooking when the grains are tender and have a slight bite to them.
  • Let the pesto cool slightly before adding it to the quinoa: This will prevent the pesto from becoming too oily.
  • Serve the pesto quinoa warm or cold: It's delicious either way!

Conclusion:

Pesto quinoa is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's packed with protein, fiber, and healthy fats, and it's also a good source of vitamins and minerals. Whether you're looking for a quick and easy weeknight meal or a healthy and satisfying side dish, pesto quinoa is a great option.
