PESTO PASTA CAPRESE SALAD
The traditional Caprese salad is modified to pasta form. The mozzarella used is a fresh mozzarella, if you use the brick style, it will not be the same. If you can't find the pearlini mozzarella, use the cieglini and cut it in half. Regular rotini pasta can be used but the cooking time will be different.

Steps:
- Make the pesto: Add the basil, parsley, chives, pine nuts, garlic, lemon juice, and salt to a high-powered blender or food processor. Blend on high speed, scraping down the sides with a rubber spatula as needed, until well combined, 1-2 minutes.
- Make the zucchini pasta salad: Heat the vegetable oil in a large, high-walled skillet over high heat. Working in batches, fry the zucchini rounds in a single layer for 1-1½ minutes per side, until the outside is golden brown but the zucchini is still slightly crisp. Transfer to a paper towel-lined plate to drain, blotting away any excess oil.
- Transfer the zucchini to a large serving bowl. Add the spinach and red wine vinegar, and toss gently to combine. Add the penne, pesto, lemon zest, capers, and mozzarella, and fold gently until well combined. Season with salt and pepper to taste.
- Garnish with the basil leaves and serve slightly warm, or refrigerate until ready to serve.
- Enjoy!

CHICKEN PESTO PASTA SALAD
Super easy pasta salad- wonderful for any thing from a brunch to a summer dinner. Everyone likes it- even my picky 3 year old! My husbands co-worker brought this to share for an event and he begged for the recipe. The only particular is that the pasta salad will taste best if you use the pesto in a plastic container in the refrigerated section. The serving size stated is the pasta salad as main dish- in a pot luck or as a side it serves a lot more.

CHEESE TORTELLINI PESTO PASTA SALAD
This is my favorite way to make (and eat!) pasta salad in the whole world! I have been making it for years and always get asked for my recipe. So happy to share it with you all! *It makes alot, I'll warn ya, but you can make a smaller version by omitting the rotini and adding half the rest of the ingredients...but... it's highly...

Steps:
- 1. Cook pastas, set aside to cool a bit.
- 2. In large bowl or punch bowl, add rest of ingredients folding gently til well mixed.
- 3. Gently fold in pastas well.
- 4. Adjust seasonings to taste, meaning, add more salt, parmesan, etc., til it's to your own liking.
- 5. Serve immediately, or refrigerate.
- 6. *If serving this much later or the next day, you'll need to "refresh" this. Just add a bit more olive oil, salt and parmesan cheese before serving as the noodles suck up the oil and seasonings a bit.
- 7. *This salad is best room temp or even slightly warm.

PESTO CHICKEN SALAD (PASTA SALAD STYLE WITH NO PASTA)
This is a super healthy salad, chicken, veggies and a yummy pesto dressing. It reminds me of pasta salad because of the dressing but I make it without pasta. You could definitely add it, I'd just increase the dressing slightly if you do. It came from a combination of different recipes. I love substituting greek yogurt for things like mayo, which was part of my idea here. All frozen veggies could be replaced with canned... sometimes I use asparagus instead of grean beans. Also, if you prefer less of a tangy dressing you can add a little splenda/stevia/sweetener of your preference and/or decrease the lemon.

Steps:
- Cut pre-cooked chicken into 1" cubes and set aside.
- Prepare vegetables: Thinly slice green onion. Drain and quarter artichoke hearts. Chop cherry tomatos in half. Thaw peas and green beans, I recommend cutting the green beans into approx 1" lengths. Drain all the veggies as well as possible. Squeeze the extra moisture out with a paper towel if you like.
- In a large bowl, mix together greek yogurt, pesto, lemon juice, salt and pepper.
- Mix in all of the vetgetables and chicken. Toss to coat.
- You can eat immediately but I think it tastes better after sitting in the fridge overnight. It's good on its own or served over lettuce or broccoli shreds.

TOMATO, MOZZARELLA AND PESTO PASTA SALAD
I came up with this one day when trying to use up ingredients I already had. The pine nuts give the salad a great, nutty flavour and add a bit of crunch to the texture. Serves 4 as a side dish. Update: I have added some olive oil to the pasta salad to moisten it up a bit, based on a review.

HUMMUS 'PESTO' COLD PASTA SALAD
Steps:
- Break spacghetti into thirds and cook al dente. Run under cold water. Toss with a tablespoon of Bertolli olive oil to keep it from sticking. Put the first seven ingredients in a food processor or blender and blend until a paste about the same consistency as pesto is created, adding water a tablespoon at a time if needed. (Lean to the thin side, remember the hummus will get firmer when chilled.) Pour hummus over the pasta and toss until coated. Chill. Before serving, toss in the tomatoes, onions, and olives. Drizzle with the 1/4 cup of Bertolli olive oil. Serve and enjoy.

Tips:
- Fresh ingredients: Use the freshest ingredients possible for the best flavor. Fresh basil is essential for a vibrant pesto.
- Quality pasta: Choose a high-quality dried or fresh pasta for the best texture and flavor.
- Cook the pasta al dente: Cook the pasta according to the package directions, until it is al dente (slightly firm to the bite). This will help it hold its shape and texture in the salad.
- Make the pesto ahead of time: The pesto can be made up to 2 days ahead of time and stored in the refrigerator. This will save you time when you're ready to assemble the salad.
- Chill the pasta before assembling: After cooking the pasta, rinse it with cold water and then chill it in the refrigerator for at least 30 minutes. This will help the pasta absorb the pesto better and prevent it from becoming too soggy.
- Add the vegetables and cheese just before serving: This will help prevent the vegetables from becoming wilted and the cheese from becoming rubbery.
Conclusion:
Pesto pasta salad is a delicious and versatile dish that can be enjoyed for lunch, dinner, or as a side dish. It's easy to make and can be tailored to your own preferences. With its bright flavors and colorful ingredients, pesto pasta salad is sure to be a hit at your next gathering.
