PARMESAN CRUSTED PESTO GRILLED CHEESE SANDWICH

Categories     Sandwich     Cheese

Number Of Ingredients 5

2 slices ciabatta or French bread
1 tablespoon soft butter, for brushing the bread
2 slices mozzarella cheese
2 tablespoons basil pesto
1/3 cup finely shredded Parmesan cheese

Steps:

  • 1. Heat a non-stick pan over medium heat. 2. Butter the outside of each slice of bread. Spread basil pesto on the inside of each slice of bread. Place the mozzarella cheese slices on top of one piece of bread. Top with the other slice of bread. Sprinkle half of the Parmesan cheese on the outside of one side of the sandwich. 3. Place the sandwich, cheese side down, on the hot pan. Grill for 2 minutes or until Parmesan cheese is crusted and golden brown. Sprinkle the rest of the Parmesan cheese on the outside of the other side of the sandwich. Cook until golden brown and the cheese has melted, about 2 more minutes. Serve immediately.

Tips:

  • Use fresh basil leaves for the best flavor. If you don't have fresh basil, you can use dried basil, but the flavor will be less intense.
  • If you don't have pine nuts, you can substitute walnuts or almonds.
  • Use a good quality olive oil. Extra virgin olive oil is the best choice.
  • Grate the Parmesan cheese yourself. Pre-grated Parmesan cheese doesn't melt as well.
  • Use a thick, sturdy bread for the sandwich. A sourdough or French bread works well.
  • Butter the bread before grilling. This will help the sandwich brown evenly.
  • Don't overcrowd the pan when grilling the sandwiches. This will prevent them from cooking evenly.
  • Serve the sandwiches immediately after they are grilled.

Conclusion:

The pesto grilled cheese sandwich is a delicious and easy-to-make sandwich that is perfect for lunch or dinner. It is a great way to use up leftover pesto. The sandwich can be customized to your liking, so feel free to experiment with different types of bread, cheese, and pesto.
