Pesto can sometimes be overpowering, but not in this recipe! Using it in a marinade adds the wonderful flavors of basil and garlic, without taking away from the natural flavors of the chicken and vegetables.

Delicious, moist and flavorful. I prefer using homemade pesto, but store-bought will do if necessary. This is sure to become a family favorite! Serve with lemon wedges. This recipe was made in a Panasonic CIO.

Tips:

  • Use a food processor or blender to make the pesto. This will help to create a smooth and creamy sauce.
  • If you don't have a food processor or blender, you can chop the basil, garlic, and pine nuts by hand. Just be sure to chop them very finely.
  • Use fresh basil for the best flavor. If you can't find fresh basil, you can use dried basil, but the flavor will not be as good.
  • Add a little bit of lemon juice to the pesto to brighten up the flavor.
  • You can also add other ingredients to the pesto, such as Parmesan cheese, sundried tomatoes, or roasted red peppers.
  • Use a variety of vegetables for the kabobs. Some good options include cherry tomatoes, zucchini, mushrooms, and bell peppers.
  • Marinate the chicken in the pesto for at least 30 minutes before grilling. This will help to infuse the chicken with flavor.
  • Grill the chicken and vegetables over medium heat. This will help to prevent them from burning.
  • Serve the kabobs with your favorite dipping sauce, such as tzatziki sauce or hummus.

Conclusion:

Pesto chicken kabobs are a delicious and easy-to-make meal that is perfect for summer gatherings. The pesto sauce is flavorful and versatile, and it can be used to marinate chicken, vegetables, or even pasta. The kabobs are also a great way to get your daily dose of fruits and vegetables. So next time you're looking for a quick and easy meal, give pesto chicken kabobs a try.
