PERSIMMON RAISIN COOKIES

This is a spicy cookie that's Mmmm, Mmmm Good! It's hard to get fresh persimmons these days, but if you have them, this is a great recipe. It's an original handed down to me by old/ancient relatives, and over 170 years old. These cookies also freeze well. Have fun!

1/2 cup softened butter
1 cup sugar
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon salt
1 cup persimmon pulp
1 teaspoon baking soda
1 cup raisins
1 cup chopped pecans

Steps:

  • Cream butter, gradually add sugar, beating well.

  • Drop dough by tablespoons onto greased cookie sheets.
  • Bake at 350ºF for 12 to 15 minutes or until done.
  • Usually yields about 3 dozen.

Tips:

  • Choose ripe persimmons: Look for persimmons that are soft and slightly yielding to the touch, with a deep orange color. Avoid persimmons that are too hard or have blemishes.
  • Use a food processor or blender to puree the persimmons: This will help to create a smooth and creamy cookie dough.
  • Chill the cookie dough for at least 30 minutes before baking: This will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies until they are just set: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing: This will help to prevent them from becoming too soft.

Conclusion:

Persimmon raisin cookies are a delicious and unique treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages.
