Tips:

  • Choose ripe persimmons: Look for persimmons that are deep orange in color and slightly soft to the touch. Avoid persimmons that are green or have blemishes.
  • Peel and puree the persimmons: To peel a persimmon, simply use a sharp knife to cut off the top and bottom of the fruit. Then, score the skin lengthwise and peel it off. To puree the persimmons, simply place them in a blender or food processor and blend until smooth.
  • Use a bundt pan: A bundt pan is a type of cake pan that has a hole in the center. This allows the cake to cook evenly and helps to create a moist, tender crumb.
  • Cream the butter and sugar together: This will help to create a light and fluffy cake. Be sure to cream the butter and sugar together until they are light and fluffy.
  • Add the eggs one at a time: This will help to prevent the cake from curdling.
  • Fold in the flour and persimmon puree: Be careful not to overmix the batter. Overmixing can result in a tough, dry cake.
  • Bake the cake at 350 degrees Fahrenheit for 45-50 minutes: The cake is done when a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.

Conclusion:

Persimmon cake with cream cheese icing is a delicious and moist cake that is perfect for fall. The persimmons add a unique flavor and sweetness to the cake, while the cream cheese icing is tangy and creamy. This cake is sure to be a hit at your next party or gathering.
