NAZOOK (SWEET PERSIAN PASTRY)

Nazook (Sweet Persian Pastry) image

Nazook is a rich Persian pastry which is not too sweet, and wonderful with tea or coffee. I developed this version while trying to reproduce a commercial product from a bakery in Salem, OR. I think mine is much better. This is definitely not for people who are watching their fat intake.

Time 3h40m

Yield 30

Number Of Ingredients 15

1 cup sour cream, at room temperature
2 teaspoons white sugar
1 (.25 ounce) package active dry yeast
1 egg
1 tablespoon white vinegar
1 tablespoon vegetable oil
3 cups all-purpose flour
½ cup butter
1 pound butter, melted
2 ½ cups white sugar
2 teaspoons vanilla extract
4 cups all-purpose flour
2 egg whites
2 egg yolks
1 teaspoon plain yogurt

Steps:

  • Mix 1 cup sour cream, 2 teaspoons sugar, and yeast together in a bowl. Let stand for 5 minutes. Mix in egg, vinegar, and oil.
  • Pour 3 cups flour into a large bowl. Cut in 1/2 cup butter, working it into the flour until mixture is the consistency of meal. Stir in sour cream mixture until dough comes together.
  • Turn dough out onto a floured surface; knead until smooth but still slightly tacky, about 10 minutes. Cut dough into 4 pieces and wrap each piece in plastic wrap. Refrigerate until firm, at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix melted butter, 2 1/2 cups sugar, and vanilla extract together in a very large bowl to make filling. Stir in 4 cups flour. Beat in egg whites.
  • Roll a piece of dough into an 8x12-inch rectangle on a lightly floured work surface. Crumble 1/4 of the filling mixture on top, leaving a 1/2-inch border on the long sides. Cover filling with plastic wrap; flatten out with a rolling pin. Roll dough into a tight roll, starting with one of the long sides.
  • Cut roll into 2-inch pieces at a slight angle. Arrange pieces on a rimmed baking sheet. Push tops down gently to flatten slightly. Repeat with remaining 3 pieces of dough and filling.
  • Whisk egg yolks and yogurt together to make glaze. Brush glaze over pieces of dough.
  • Bake in the preheated oven until golden brown, 20 to 30 minutes. Let cool before serving, about 15 minutes.

Time 1h40m

Yield 16 servings

Number Of Ingredients 13

2 cups finely chopped walnuts
1 cup sugar
1 1/2 teaspoons ground cardamom
1 package phyllo
Butter, melted
Syrup, recipe follows
1/2 cup sugar
1/2 cup honey
1 cinnamon stick
2 slices lemon
2 slices orange
1/2 cup water
1/2 cup finely chopped walnuts or pistachios, for garnish

Steps:

  • In a bowl combine the walnuts, sugar and cardamom. Butter a 9 by 9 by 1 3/4-inch baking dish. Cover phyllo with a very lightly dampened towel and keep covered at all times when it is not being used. Cut phyllo into 8 by 11-inch sheets. Place 1 sheet at a time on a work surface and lightly brush with butter. Place 2 tablespoons of the spiced sugar-nut mixture lengthwise down the center of each leaf of phyllo. Fold each sheet over several times lengthwise to form a 1-inch wide strip, enclosing the filling. Roll up each strip to make a coil and place flat (coil side up) in the prepared dish against the side to prevent it from uncoiling. Repeat the whole procedure with the rest of the phyllo sheets. Brush with butter and bake in a preheated 350 degrees F oven for 40 minutes.
  • Combine all of the ingredients, except nuts, and bring to a boil. Simmer for 30 minutes, cool for 10 minutes, then strain. Pour over pastries once they have come out of the oven and let soak for 1 hour. Sprinkle with walnuts or pistachios.

Yield about 20 cream puffs

Number Of Ingredients 14

Dough
1 cup water
1 stick unsalted parve margarine (4 oz.)
1/2 teaspoon salt
1 cup flour
5 eggs
Cream Filling
1 pint (8 oz.) parve whipping cream, whipped
1 cup powdered sugar
Garnishing Syrup (optional)
1 cup honey
1/4 cup rose water
1/2 teaspoon saffron
1/2 teaspoon cardamom

Steps:

  • 1. Preheat oven to 400°F. Line two cookie sheets with parchment paper.
  • 2. In a small nonstick saucepan, bring water, margarine, and salt to a boil. When margarine melts, add flour all at once, stirring rapidly. Reduce heat to medium and continue to cook until a ball of dough that detaches easily from the pot forms. Set aside and let cool for 10 minutes.
  • 3. In the meantime, make the cream filling by beating the parve whipping cream until it forms peaks. Add the powdered sugar and mixing well. Store in a cool place until ready to use.
  • 4. Transfer cooled dough to the bowl of stand mixer fitted with a flat paddle attachment. Add eggs, one by one, making sure each egg has completely incorporated into the dough before adding the next.
  • 5. Transfer dough to a pastry bag fitted with a large star pastry tip (Wilton 4B is perfect) or simply use an ice cream scoop to form puffs. Form meringue-like mounds, 3" in diameter and 2" in height, directly on the prepared pans.
  • 6. Bake for 20 minutes until golden brown; transfer puffs to a cooling rack.
  • 7. When the puffs are completely cooled, cut in half, using a serrated knife, and fill the cavity with whipped cream.
  • 8. Optional: To make the syrup, mix all ingredients in a bowl and microwave for 1 minute. Drizzle cooled syrup on cream puffs right before serving. Can also be served with a drizzle of melted chocolate or sprinkled with powered sugar.

Tips:

  • Prep your ingredients: Before you start baking, measure and prepare all your ingredients according to the recipe. This will help you stay organized and ensure you have everything you need.
  • Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the flavor of your pastries. Opt for fresh butter, eggs, and flour, and use spices and extracts that are still within their expiration date.
  • Follow the recipe carefully: Persian pastries often have specific techniques and ingredients that are essential for their unique flavor and texture. Be sure to follow the recipe closely and avoid making substitutions unless you are an experienced baker.
  • Pay attention to the baking time: Each pastry has a specific baking time that is crucial for achieving the desired texture and flavor. Use a timer to ensure you don't over or under-bake your pastries.
  • Let your pastries cool before serving: Once your pastries are baked, allow them to cool slightly before serving. This will help them set and develop their full flavor.

Conclusion:

Persian pastries offer a delightful blend of flavors, textures, and aromas that can tantalize any taste bud. With careful preparation and attention to detail, you can create these delectable treats in your own kitchen. Whether you're a seasoned baker or just starting out, these recipes will guide you through the process of making traditional Persian pastries that will impress your family and friends.
