1/2 cup diced onion (sauteed with the beef)
4-7 ounces chopped roasted green chile (added with the beans and corn)
1 cup chopped baby spinach (tossed in at the end just to wilt)

Steps:

1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup water

Steps:

  • Saute meat (and onion if using fresh); drain fat if necessary; turn heat to low.

20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
