Time 50m

Yield 4 servings

Number Of Ingredients 19

2 teaspoons sea salt
2 lemons, halved, plus more for serving
3 bay leaves
1 handful fresh thyme leaves
1 handful fresh flat-leaf parsley
1/4 cup seafood seasoning (recommended: Old Bay or Zatarains shrimp boil)
2 pounds jumbo shrimp, with shells, heads, and tails on
Bloody Mary Cocktail Sauce, recipe follows
4 ripe tomatoes, coarsely chopped
2 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1/2 cup ketchup
2 tablespoons grated fresh or prepared horseradish
1 lemon, juiced
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 shot pepper vodka
1 teaspoon celery seed
Sea salt and freshly ground black pepper

Steps:

  • Fill a large pot with about a 1/2 gallon of water, add the salt and squeeze in the lemon juice; toss the halves in there too for extra flavor. Add the herbs and seafood seasoning. Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Reduce heat to medium-low and add shrimp. Simmer, uncovered, for 5 minutes or until the shrimp are bright pink and the tails curl. Using a slotted spoon, remove the shrimp from the poaching liquid and chill thoroughly before peeling. Serve with lemon wedges and Bloody Mary Cocktail Sauce as part of a raw shellfish bar.
  • Combine the tomatoes, celery, and onion in a blender and puree to break the vegetables down. Add the remaining ingredients and puree until smooth. Chill before serving with a raw bar.

Yield Makes 16 servings

Number Of Ingredients 20

For shrimp
3 lb large shrimp in shell (75)
For cocktail sauce
3/4 cup ketchup
1/4 teaspoon finely grated fresh orange zest
1/4 cup fresh orange juice
1 to 1 1/2 tablespoons fresh lemon juice
3 tablespoons drained bottled horseradish
1/4 teaspoon Tabasco
For Green Goddess dipping sauce
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup chopped scallion
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh tarragon
3 flat anchovy fillets or 1 tablespoon anchovy paste
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Prepare shrimp:
  • Bring a 6- to 8-quart pot two-thirds full of salted water to a boil, then simmer shrimp, stirring occasionally, until they turn pink and are almost cooked through (they will still be translucent in very center but will continue to cook from residual heat), about 3 minutes. Drain and cool. Peel shrimp, leaving tail and first segment of shell intact.
  • Make cocktail sauce:
  • Stir together all cocktail sauce ingredients until well combined.
  • Make Green Goddess sauce:
  • Purée all sauce ingredients in a food processor until smooth and light green.
  • Serve shrimp with sauces for dipping.

Tips:

  • Use fresh, peeled, and deveined shrimp for the best results.
  • Bring the poaching liquid to a simmer before adding the shrimp. This will help to prevent the shrimp from overcooking.
  • Cook the shrimp for no more than 3-4 minutes, or until they are just cooked through. Overcooked shrimp will be tough and rubbery.
  • Immediately transfer the shrimp to an ice bath to stop the cooking process.
  • Make the Green Goddess sauce ahead of time so that the flavors can meld. This sauce can be made up to 2 days in advance.
  • Serve the poached shrimp with the Green Goddess sauce, lemon wedges, and chopped fresh herbs.

Conclusion:

This recipe for Perfectly Poached Shrimp with Green Goddess Sauce is a delicious and easy-to-make appetizer or main course. The shrimp are cooked to perfection and the Green Goddess sauce is a tangy and flavorful complement. This dish is sure to please everyone at your table.
