2 cups elbow macaroni
¼ cup sweet relish
½ cup onion, finely chopped
½ cup finely chopped green bell pepper
¼ cup finely chopped carrot
1 hard-boiled egg, chopped
¼ cup creamy salad dressing (such as Miracle Whip®)
¼ cup reduced-fat sour cream
2 tablespoons low-fat milk
2 tablespoons white sugar
1 teaspoon dried dill weed
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain well; rinse with cold water and drain again.
  • Reserve 2 tablespoons relish juice; place the rest in a large bowl with onion, bell pepper, carrot, and egg.

1 pkg unflavored gelatin, 1 tablespoon
1/2 c cold water
1/4 c apple cider vinegar
1/4 c water, cold
1 Tbsp lemon juice
2 c boiling water
1/2 c granulated sugar
1/2 tsp salt
2 c finely shredded cabbage
1/2 c diced celery
1/2 c shredded carrots

Steps:

  • 1. Sprinkle gelatin over 1/2 c. cold water for 5 minutes. Add vinegar and 1/4 more cup water, lemon juice, boiling water, sugar and salt. Stir until dissolved. Cool to room temperature. Add cabbage, celery and carrots, distributing them evenly throughout gelatin mixture. Individual salad molds can be used or and attractive dish that makes the salad thick enough to cut into attractive servings. (I used my bread loaf pan) Refrigerate until set. Serve on lettuce leaves.
  • 2. Note: Can use bag of prepared cabbage from the produce department.

My mom and sister still make it for our holiday family gatherings, although now we usually use sugarfree Jello. (I've recently discovered that Perfection Salad is not something unique to our family - there are a lot of old recipes on net for it. They're generally similar to the one below.)

1 cup boiling water
1 (3 ounce) package lemon Jell-O gelatin
2 tablespoons vinegar or 2 tablespoons lemon juice
1 teaspoon salt
1 cup cold water
1 cup finely diced celery
1 cup finely shredded cabbage
1 tablespoon dried onion flakes
2 tablespoons chopped pimiento
mayonnaise (Best Foods, Helmann's, or Vegenaise)

Steps:

  • Pour boiling water over jello in bowl.
  • Stir until jello is disolved.
  • Stir in vinegar, veggies, salt, and cold water.
  • Pour into mold, chill until firm.
  • Serve unmolded on chilled plate, topped with a generous dollop of mayonnaise (family tradition of the last 30 years or so demands that you use Best Foods mayo brand - *never* Miracle Whip).
  • If preferred, use 1/2 cup celery and 1 cup grated carrot.
  • You can use sugar-free jello for a diabetic/lowcarb version of Perfection Salad. Sometimes lemon jello is difficult to find - we've sometimes used lime instead.
