Tips:

  • Use fresh pumpkin puree: Fresh pumpkin puree will give your cheesecake bars a more vibrant color and flavor. To make your own pumpkin puree, simply roast a pumpkin until tender, then scoop out the flesh and puree it in a food processor or blender.
  • Don't overbeat the cheesecake batter: Overbeating the batter will make your cheesecake bars dense and dry. Mix the ingredients just until they are combined.
  • Bake the cheesecake bars in a water bath: Baking the cheesecake bars in a water bath will help to prevent them from cracking. To create a water bath, place the cheesecake pan inside a larger pan filled with hot water.
  • Chill the cheesecake bars before serving: Chilling the cheesecake bars for at least 4 hours, or overnight, will allow them to set properly and develop their full flavor.

Conclusion:

These perfect pumpkin cheesecake bars are the perfect fall dessert. They are creamy, rich, and full of pumpkin flavor. With a graham cracker crust, a creamy pumpkin cheesecake filling, and a dollop of whipped cream, these bars are sure to be a hit at your next party or gathering.
