DAD'S BASIC MOIST PORK ROAST

Dad's Basic Moist Pork Roast image

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

Time 2h10m

Yield 6-8 serving(s)

Number Of Ingredients 15

1/4 teaspoon sea salt
1/2 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon sage
1/4 teaspoon marjoram
1/4 teaspoon dry mustard
1/4 teaspoon ground cloves
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
2 -3 tablespoons extra virgin olive oil
3 -4 lbs pork roast or 3 -4 lbs pork shoulder
3 -4 large red potatoes
1 1/2-2 cups carrots (or both) or 1 1/2-2 cups green beans (or both)

Steps:

  • Preheat oven to 350f.
  • Mix all spices and oil together. If needed, add more oil to produce a thick molasses-like consistency. Rub mixture on roast and place in roasting pan. Cover with foil and bake approximately 30 mins per pound until internal temperature is at least 165f.
  • About an hour before it's finished, add a little water to the bottom of the pan and add lightly seasoned (salt/pepper/oregano), cut potatoes and carrots or green beans. Do not cover the vegetables with the water. Do recover the roast with foil to avoid drying it out.

Tips:

  • Choose the right cut of pork: Look for a pork shoulder (also known as Boston butt) or pork loin roast. These cuts are well-marbled and will stay moist during cooking.
  • Use a flavorful rub: Create a simple rub using a blend of spices and herbs. Some popular options include garlic powder, onion powder, paprika, cumin, chili powder, oregano, and thyme.
  • Sear the pork roast before roasting: Searing the roast helps to develop a flavorful crust and lock in the juices. Heat a large skillet over medium-high heat and sear the roast on all sides until browned.
  • Roast the pork roast at a low temperature: This will help to keep the meat moist and tender. Roast the pork roast at 300°F for 3-4 hours, or until the internal temperature reaches 145°F.
  • Let the pork roast rest before carving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.

Conclusion:

With careful preparation and cooking, you can create a perfect pork roast every time. By following these tips, you'll be able to cook a delicious and juicy pork roast that your family and friends will love. Experiment with different rubs and cooking methods to find the perfect combination for your taste.
