PERFECT BUTTERMILK PANCAKES
Pancakes are the hero of the breakfast table, and their very taste can even be described as "deeply breakfasty": eggy, salty, just this side of sweet. A little indulgent and yet still somehow appropriate first thing in the morning, those fluffy stacks with crisped edges, dripping with maple syrup, are everything you want, exactly when you want them. Here is how to get to them right every time, whether it's a lazy Sunday morning or a hurried weekday.

Steps:
- Heat the oven to 325 degrees. Whisk flour, sugar, baking powder, baking soda and kosher salt together in a bowl. Using the whisk, make a well in the center. Pour the buttermilk into the well and crack eggs into buttermilk. Pour the melted butter into the mixture. Starting in the center, whisk everything together, moving towards the outside of the bowl, until all ingredients are incorporated. Do not overbeat (lumps are fine). The batter can be refrigerated for up to one hour.
- Heat a large nonstick griddle or skillet, preferably cast-iron, over low heat for about 5 minutes. Add 1 tablespoon oil to the skillet. Turn heat up to medium-low and using a measuring cup, ladle 1/3 cup batter into the skillet. If you are using a large skillet or a griddle, repeat once or twice, taking care not to crowd the cooking surface.
- Flip pancakes after bubbles rise to surface and bottoms brown, about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside a rimmed baking sheet, and keep in heated oven until all the batter is cooked and you are ready to serve.
PERFECT POTATO PANCAKES
I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

Steps:
- Peel and shred potatoes; place in a bowl of cold water. Line a colander with cheesecloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. In a large bowl, combine the potatoes, eggs, flour, onion, salt and pepper., In an electric skillet, heat 1/4 in. oil over medium heat. Drop batter by 1/4 cupfuls into oil, about 3 in. apart. Press lightly to flatten. Fry until golden brown, about 4 minutes on each side. Drain on paper towels. Repeat with remaining batter. If desired, top with maple syrup or applesauce.

PERFECT WHOLE WHEAT PANCAKES
This recipe comes from the Tassajara Bread Book. I like whole wheat but I hate the heaviness of the finished recipe and usually halve it with white flour. This recipe defies all of that. They are so good. The genius who created this recipe should get a medal. I have used powdered milk in place of regular milk for this and found no difference. I'm saying 8 pancakes in yield, but it really varies on the size you like your pancakes. Additional note: you can substitute applesauce for the oil (use the same amount) and they turn out exactly the same with a lot less calories.

Steps:
- Heat griddle or large skillet to medium-high heat (375 degrees F.). Grease lightly with oil.
- In medium bowl, beat eggs. Add milk and melted butter; mix well. Add all remaining ingredients; stir just until large lumps disappear.
- For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until bubbles begin to break on surface. Turn; cook 1 to 2 minutes or until golden brown.
- My tips: I use a skillet and heat between med-low to medium. I think it makes no difference in which order the ingredients are added and mixed. I double the recipe in order to have enough to feed my bunch. If you don't have self rising flour you can make it by adding 1 teaspoon baking powder & 1/4 teaspoons salt to every cup of all purpose flour used in your recipe. This was the first homemade mix I ever tried. I had always made from a box. I have yet to find a homemade recipe for pancakes that measure up to this one. Hope you enjoy them!

This is a staple in my house on the weekends. Its a hit with my kids and guests that come over. It can easily be double or tripled. They freeze very well so no batter goes to waste. Warm in microwave and they taste like they were just made. You can even dress it with whipped cream and/or fruit of your choice.

SIMPLY PERFECT PANCAKES
Malt, rather than sugar, is what sweetens most food-service (i.e., restaurant/hotel) pancake mixes. For that typical "diner" taste, try malt in your pancakes instead of sugar. From King Arthur flour.

Steps:
- Stir the dry ingredients (flour, sugar, salt, baking powder and baking soda) together in good sized bowl.
- Measure out milk and mix in lemon or lime juice.
- Let it sit a few moments.
- Make a well in the dry ingredients.
- Pour in the milk, oil, egg and vanilla.
- Whisk all the ingredients together until the batter is fairly smooth; there should only be a few small lumps.
- Melt enough butter in the bottom of a frying pan to coat it evenly; after it has melted, wipe out any excess with a paper towel or napkin.
- The pan should be over medium heat.
- Once the pan is heated, pour about 1/2 cup batter in (or, adjust to fit the size of the pan).
- Allow the pancake to cook several minutes, until the edges are cooked and there are bubbles appearing and bursting in the middle of the cake.
- Flip the pancake, and allow to cook about 2 minutes on the raw side.
- After a minute or two on this side, the cake will raise up and become thicker.
- Once this happens, only cook the cake another minute or so, until the pan-side is nicely golden.
- If the bottoms of the cakes are browning too fast, before there are bubbles in the middle or the second side can rise, then turn the heat down on the stove.
- If the opposite problem is occuring, increase the heat.
- After a couple, it'll be just right!
- This recipe makes 6 enormous pancakes; I would imagine that, made a more normal size, it would yield about 12.

Steps:
- 1. In a food processor, process the potatoes and onions, in batches, until finely chopped. Empty each batch into a strainer and, using a spoon, press down on the mixture to remove as much water as possible. In a large bowl, combine the drained potato-onion mixture, the flour, bread crumbs, baking powder, salt, pepper, and eggs; mix well. Heat the oil in a large skillet over medium heat. Using a serving spoon, spoon about 1/4 cup batter for each pancake into the hot oil, flattening into a pancake shape. Cook for 2 to 3 minutes per side, until golden on both sides. Drain on a paper towel-lined platter and serve warm. Make these small if you want to serve them as appetizers. Serve with the traditional fixin's of applesauce and sour cream
Tips:
- Use the right ingredients: Fresh, high-quality ingredients will make a significant difference in the taste of your pancakes. Use all-purpose flour, baking powder, sugar, salt, eggs, milk, and butter.
- Measure your ingredients accurately: Using the correct amount of ingredients is crucial for achieving the perfect pancake. Use measuring cups and spoons for precise measurements.
- Don't overmix the batter: Overmixing the batter will result in tough, dense pancakes. Mix just until the ingredients are combined.
- Cook the pancakes over medium heat: Cooking the pancakes over medium heat will prevent them from burning and ensure they are cooked evenly.
- Flip the pancakes when bubbles form around the edges: This is a sign that the pancakes are ready to be flipped. Use a spatula to carefully flip the pancakes.
- Serve the pancakes immediately: Pancakes are best served immediately after they are cooked. Top them with your favorite toppings, such as butter, syrup, whipped cream, or fruit.
Conclusion:
Follow these tips to make perfect pancakes every time. With a little practice, you'll be able to whip up a delicious batch of pancakes that will impress your family and friends. So, gather your ingredients, heat up your griddle, and get ready to enjoy a classic breakfast treat.
