Easy No-Fail Lemon Chicken Marinade image

This just might be the best chicken marinade, ever. It's incredibly versatile. Use for marinating chicken, turkey, pork, fish, shrimp, tofu or vegetables. When marinating meats and poultry, marinate at least 1 hour or overnight. When marinating something more delicate like fish, you only need to marinate 1 to 2 hours. You can also use this to baste while cooking or grilling, if you plan to do this, simply set a portion of the prepared marinade aside for basting. **This makes enough to marinate 2 to 2 ½ pounds of chicken.

Zest of 1 lemon, peeled or finely grated
1/4 cup fresh lemon juice, 1 to 2 lemons
2 tablespoons olive oil
1 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/4 teaspoon to 1/2 teaspoon red pepper flakes, depending on how spicy you like things
1/2 teaspoon fresh ground pepper
3 cloves garlic, crushed with the side of a large knife or minced
1/4 cup chopped fresh dill, parsley, cilantro, basil or a combination, optional

Steps:

  • Whisk lemon juice, olive oil, mustard, salt, red pepper flakes and black pepper together until the salt has dissolved. Stir in the garlic, lemon zest and herbs (if using). Refrigerate and use within 1 to 2 hours.
  • To marinate chicken, add the marinade and chicken to a resealable food-safe bag or container and marinate in the refrigerator. Since this is so flavorful, even 20 minutes will work wonders. We don't recommend marinating more than a day in advance since the lemon in the marinade can cause the chicken to toughen.

1 teaspoon EACH: sea salt and pepper
2 cloves garlic (minced)
2 lbs. chicken thighs or breast

Steps:

  • Combine the lemon juice, olive oil, oregano, thyme, rosemary, salt, pepper, and garlic into a small bowl.

Perfect Lemon-Garlic Chicken Marinade image

I put this together when I was making some other Lebanese dishes, and I wanted chicken, but wasn't sure how I was going to make it. So this is what I came up with. One of the ingredients is Sumac- can find in middle eastern markets for sure. Its a dark red spice, that adds a lemony flavor. Its so very good. I like to make this chicken and serve it with Tabouli and Hummus. But I think it would be great with just about anything you choose to serve it with.

Yield 2-4 breasts of chicken-if butterflied, 2-3 serving(s)

Number Of Ingredients 7

2 chicken breasts
4 -5 garlic cloves, crushed
2 -3 tablespoons lemon juice
1/4 cup extra virgin olive oil
1 teaspoon sumac
1/2 teaspoon salt
1 storage size ziploc bag

Steps:

  • If chicken breasts are boneless and thick, I think they turn out better butterflied.
  • Peel garlic and crush using a mortar/pestol with a little salt (makes crushing garlic easier) or buy garlic already crushed and place in a small bowl.
  • Add lemon juice, olive oil, and sumac, and salt if you bought crushed garlic.
  • Mix together.
  • Place chicken in ziploc bag, add mixture from bowl. Make sure chicken is coated, seal bag and then place in refrigerator.
  • I think it tastes best when marinated for at least 4 hours. But I 'm sure less is fine too.
  • Grill chicken until done.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs are best for this marinade. If you're using chicken breasts, pound them to an even thickness so they cook evenly.
  • Make sure the marinade is flavorful: The marinade should have a good balance of sweet, sour, and savory flavors. Use fresh lemon juice and garlic, and don't be afraid to add other spices and herbs, such as thyme, rosemary, or paprika.
