PERFECT LEMON CURD

Time 20m

Number Of Ingredients 5

1/2 c lemon juice, fresh
1/2 c butter, cubed
3 eggs, lightly beaten
1 c sugar
2 Tbsp lemon zest, grated

Steps:

  • 1. Strain lemon juice through a fine sieve to remove any pulp or seeds.
  • 2. In a microwave-safe glass bowl, melt butter. In a separate bowl, whisk together lemon juice, sugar and eggs.
  • 3. Slowly whisk lemon juice mixture into butter, whisking constantly to avoid curdling.
  • 4. Microwave on HIGH at 1-minute intervals, whisking well, until curd coats the back of a spoon. Three to four rounds in the microwave should do it.

Tips:

  • Use fresh lemons. Fresh lemon juice has a brighter, more flavorful taste than bottled lemon juice.
  • Zest the lemons before juicing them. Lemon zest adds a lovely citrus flavor to the curd.
  • Use unsalted butter. Salted butter can make the curd too salty.
  • Use a double boiler or heatproof bowl set over a saucepan of simmering water. This will help to prevent the curd from curdling.
  • Stir the curd constantly. This will help to prevent it from curdling and ensure that it cooks evenly.
  • Do not boil the curd. Boiling the curd can cause it to curdle.
  • Let the curd cool completely before refrigerating. This will help to prevent it from forming a skin.

Conclusion:

Lemon curd is a delicious and versatile spread that can be used in a variety of ways. It is perfect for spreading on toast, scones, or muffins. It can also be used as a filling for pies, tarts, and cakes. Lemon curd can also be used as a glaze for grilled chicken or fish. No matter how you choose to use it, lemon curd is sure to be a hit!
