EGG SALAD FINGER SANDWICHES

Egg Salad Finger Sandwiches image

This egg filling is of coarse wonderful on any type of bread. I use President's Choice brand of salad seasoning or you can use McCormick's Salad Supreme. Please adjust all amounts to taste. Plan ahead the egg mixture needs to chill for a minimum of 5 hours before using. To make slicing the bread easier, freeze for about 20 minutes before filling. If you want you can double the amount of filling and use more than 2 tablespoons on each sandwich. Using the amounts listed in this recipe will give you 44 small finger sandwiches, you can make these hours in advance, cover and chill until ready to serve.

THE BEST EGG SALAD

The Best Egg Salad image

While we love a jazzed up version of egg salad, we always come back to this one for its simplicity, clean flavors and sheer nostalgia. This is the best version of a classic egg salad. It's bright with herbs and the mayonnaise-to-egg ratio is just right, making it perfectly mound-able on a sandwich or bowl of greens. If you are serving a crowd, the recipe is easily doubled, or you can just keep some extra in the fridge for whenever the craving strikes.

Categories     main-dish

Time 35m

Yield 2 cups

Number Of Ingredients 8

6 large eggs
1/3 cup mayonnaise
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon chopped fresh parsley or dill
2 teaspoons Dijon mustard
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil. Remove from the heat, cover and let sit for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely.
  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Peel and roughly chop the eggs, add to the mayonnaise mixture and toss gently to combine. Serve right away, or cover and refrigerate for up to 2 days.

Tips:

  • Use fresh eggs: Fresh eggs will have a richer flavor and a creamier texture than older eggs.
  • Hard-boil the eggs properly: To ensure that the eggs are cooked evenly, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then remove the saucepan from the heat and cover it. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be.
  • Mash the eggs with a fork, not a food processor: This will give the egg salad a more rustic texture.
  • Use a combination of mayonnaise and Greek yogurt: This will make the egg salad lighter and healthier.
  • Add some chopped celery and onion: This will add some crunch and flavor to the egg salad.
  • Season the egg salad to taste: Use salt, pepper, paprika, and dry mustard to taste.
  • Chill the egg salad before serving: This will help the flavors to meld and make the egg salad more refreshing.
  • Serve the egg salad on bread, crackers, or lettuce leaves: You can also use it as a filling for sandwiches or wraps.
