Tips:

  • Use creamy peanut butter and cashew butter for a smooth texture. If you only have crunchy peanut butter or cashew butter, you can use a food processor to blend it until it is smooth.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. The cookies will continue to cook as they cool, so it's important not to overbake them.
  • Let the cookies cool completely before enjoying them. This will help them to set and firm up.

Conclusion:

These cashew and peanut butter gluten-free cookies are a delicious treat that can be enjoyed by people with and without gluten sensitivities. They are easy to make and require just a few simple ingredients. With their chewy texture and slightly sweet flavor, these cookies are sure to be a hit with everyone who tries them.
