Forget trying to roll the cabbage rolls. I tried this once and realized that I didn't need to spend all that time making the rolls because they ended up looking the same on the plate anyways.

CABBAGE ROLL CASSEROLE

Cabbage Roll Casserole image

This casserole has all the elements of cabbage rolls-ground beef, onion and rice cooked in tomato sauce-and skips the fuss of rolling. The cabbage is chopped instead and layered with the saucy filling, then topped with cheese, for a satisfying and easy casserole. Feel free to substitute other ground meats, such as turkey, for the ground beef-this recipe would also be great with a vegetarian meat substitute.

Time 1h

Number Of Ingredients 13

3 tablespoons extra-virgin olive oil, divided
1 pound lean ground beef
1 cup chopped onion
3 cloves garlic, minced
2 cups low-sodium chicken or beef broth
1 (15 ounce) can no-salt-added tomato sauce
1 cup long-grain white rice
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
8 cups chopped green cabbage (1 1/4 pounds)
2 teaspoons dried dill
¼ teaspoon crushed red pepper
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
  • Heat 1 tablespoon oil in a large saucepan over medium heat. Add ground beef and onion; cook, stirring, until the beef is no longer pink, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in broth, tomato sauce, rice, 1/4 teaspoon salt and 1/4 teaspoon pepper; bring to a simmer. Cover, reduce heat to maintain a simmer and cook, stirring once or twice, until the rice is tender, about 17 minutes (the mixture will be a little saucy). Uncover and remove from heat.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium heat. Add cabbage, dill, crushed red pepper and the remaining 1/4 teaspoon each salt and pepper. Cook, stirring, until the cabbage is just tender, 5 to 7 minutes. Remove from heat.
  • Spread half the cabbage in the bottom of the prepared baking dish. Top with half the beef mixture then half the cheese. Repeat with the remaining cabbage, beef mixture and cheese. Bake until hot and the cheese has melted and started to brown, about 25 minutes.

This was in a local school cookbook, it is super easy and as good as the "hard work" cabbage rolls.

Yield 4 serving(s)

Number Of Ingredients 6

1 lb ground beef
1 medium onion, chopped
salt and pepper
1 cup cooked rice
2 (10 ounce) cans tomato soup
3 cups cabbage, shredded (I use a cheese grater)

Steps:

  • Brown meat and onion then stir the tomato soup and the rice, salt and pepper.
  • Layer half the cabbage in a greased 9x13 inch dish, cover with 1/2 the hamburger mixture, then layer the remainder of the cabbage and rest of the hamburger mixture. (Could use only 1 layer of hamburger between cabbage).
  • Bake covered at 350 for 1 1/2 hours.
  • Sometimes I sprinkle the top with some grated cheddar cheese and pop back in the oven 5 min until melted.

Tips:

  • Choose the right cabbage. Look for a head of cabbage that is firm and heavy, with tightly packed leaves. Avoid heads that are loose or have brown spots.
  • Use a sharp knife to shred the cabbage. This will help to prevent the leaves from tearing and will make them easier to roll.
  • Don't overcook the cabbage. The cabbage should be tender but still have a slight crunch to it.
  • Use a variety of fillings. Ground beef, pork, or turkey are all popular choices, but you can also use tofu or vegetables. Be creative and experiment with different flavors.
  • Make sure the casserole is cooked through before serving. The internal temperature of the casserole should reach 165 degrees Fahrenheit.

Conclusion:

Cabbage roll casserole is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover cabbage and other vegetables, and it can be easily customized to suit your own taste preferences. Whether you are looking for a quick and easy weeknight meal or a hearty and satisfying dish for a special occasion, cabbage roll casserole is a great option.
