PEPSI CHICKEN & RICE

Pepsi Chicken & Rice image

about 8-9 years ago, my daughter and I overheard a fireman telling the butcher about this recipe, sounded so easy and quick, we promptly made it and it's been a favorite since. HOWEVER, my hubby doesn't care for the rice so I always make him some plain rice seperate. The best part about this recipe is you can increase or decrease it depending on your needs.

Time 10m

Number Of Ingredients 6

12 chicken legs
2 pkg pre-sliced portabella mushrooms
butter
1 onion sliced
1 can(s) pepsi
salt and pepper

Steps:

  • 1. Salt and pepper chicken legs. Grill chicken on all sides giving nice grill marks. In the mean time melt a few tabs of butter in fry pan over fire or electric skilled, and onions till softened. Add mushrooms and saute for a few minutes.
  • 2. Add grilled chicken to skillet, pour can of pepsi over, bring to boil, then turn to simmer and cook down for 15-20 minutes till internal chicken is done.
  • 3. I put this together while camping, didnt have many spices with me. The pepsi gives this chicken and mushroom dish such a great flavor! Son Jayde & Hubby!

Tips:

  • Use a large skillet or wok to ensure that the chicken pieces have enough space to brown evenly.
  • Make sure the chicken is fully cooked before adding the Pepsi. The chicken should be cooked to an internal temperature of 165°F (74°C).
  • Use a good quality Pepsi. A flat or stale Pepsi will not produce the same results.
  • Don't boil the Pepsi. Bring it to a simmer and then reduce the heat to low.
  • Let the chicken simmer in the Pepsi for at least 15 minutes to allow the flavors to meld.
  • Serve the chicken over rice or noodles, or with a side of vegetables.

Conclusion:

Pepsi chicken is a unique and flavorful dish that is sure to please everyone at your table. It is a quick and easy recipe to make, and it is perfect for a weeknight meal. The chicken is tender and juicy, and the Pepsi sauce is sweet, tangy, and slightly sticky. Serve it over rice or noodles, or with a side of vegetables, and enjoy!
