Categories     Side Dish

Number Of Ingredients 7

2 pounds small red potatoes, (halved and rinsed)
1/4 cup olive oil
1 onion, (chopped)
2 garlic cloves, (minced)
2 teaspoons smoked paprika
1 cup chicken broth
salt and pepper

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium heat. Add onion and cook for 5 minutes. Add garlic and 1 teaspoon paprika and cook for 30 seconds, stirring.
  • Add potatoes, chicken broth, and 1/2 teaspoon salt. Bring to boil.
  • Reduce heat to medium-low, cover, and cook for 12 to 15 minutes. You want the potatoes to just be tender. Remove cover, increase heat to medium and continue to cook until liquid evaporates, 5 to 8 minutes.
  • Stir together the remaining oil and paprika and add to the pan. Continue to cook, stirring occasionally, until nice and brown. This will take about 5 minutes. Season with salt and pepper.

POTATOES WITH PLENTY OF PEPPY PAPRIKA

Potatoes With Plenty of Peppy Paprika image

Mom taught me how to prepare this recipe the other evening. I have vague recollections of my mother preparing this. The paprika gives the potatoes a lovely color. Easy to make and delicious side dish, especially with fish! Bear in mind that all measurements are estimated. This is a dry-textured, not creamy potato dish.

Provided by COOKGIRl

Categories     Potato

Time 23m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 -2 1/2 lbs yukon gold potatoes or 2 -2 1/2 lbs white potatoes, scrubbed and peeled
1/2-1 tablespoon paprika
1 lemon, juice of
1/4 cup butter, approximately
salt, to taste
fresh minced parsley, for garnish

Steps:

  • Cut potatoes into large chunks and either pressure cook 8 minutes or boil until fork tender.
  • Transfer potatoes to large mixing bowl.
  • Add remaining ingredients and mix in well. Break up the potatoes into bite size chunks. (You're not mashing the potatoes unless you want to. But this is what Mom dictated so I listen and obey.).
  • Taste and adjust seasoning as necessary. Transfer potato mixture to serving bowl.
  • Garnish with fresh minced parsley.
  • Enjoy!
  • NOTE: The leftover potatoes make perfect potato pancakes the next morning for breakfast. Add an egg and some flour to the potato mixture, mix well and fry in a little bit of oil until golden.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet potatoes.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Soak the potatoes in cold water for 30 minutes: This will help to remove some of the starch and prevent the potatoes from sticking together.
  • Use a large skillet: This will give the potatoes plenty of room to cook evenly.
  • Don't overcrowd the skillet: Cook the potatoes in batches if necessary.
  • Cook the potatoes over medium heat: This will help them to cook through without burning.
  • Stir the potatoes frequently: This will help to prevent them from sticking to the skillet.
  • Season the potatoes to taste: You can use salt, pepper, garlic powder, onion powder, or any other desired seasonings.
  • Serve the potatoes immediately: They are best when served hot.

Conclusion:

Peppy Paprika Potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy on the outside and fluffy on the inside, and the paprika gives them a slightly smoky flavor. These potatoes are also very versatile and can be served with a variety of main dishes. Whether you are looking for a quick and easy weeknight meal or a side dish for a special occasion, Peppy Paprika Potatoes are sure to please everyone at the table.
