PEANUT BRITTLE
Steps:
- In a small bowl combine peanuts, cinnamon, and cayenne. Set aside.
- Brush the inside of a medium sized heavy saucepan with vegetable oil. Add the sugar and water to the saucepan, cook over high heat, stirring occasionally with a wooden spoon, until it comes to a boil. Stop stirring, cover and cook for 3 minutes. Uncover, reduce heat to medium, and cook until the sugar is a light amber color. Stir in peanuts. This will greatly reduce the temperature of the sugar so work quickly. Once evenly mixed, pour mixture onto a sheet pan lined with a silicone baking mat or buttered parchment paper. Using a buttered spatula, spread thin. You will have to work quickly when pouring out and spreading the mixture in the pan. If necessary, in order to achieve single layer of peanuts, top with second sheet pan whose underside has been buttered. Cool completely and then break into pieces.

HOT CINNAMON PEANUT BRITTLE
This is a peanut brittle I concocted from several different recipes I have seen and used for peanut brittle over the years. It's a fun twist on the standard brittle and tastes like a mix between hot cinnamon candies and peanut brittle.

PEPPERY PEANUT BRITTLE-IN THE MICROWAVE.
Steps:
- 1. Coat a 15x10 inch pan and metal spatula with nonstick cooking spray; set aside. In a bowl, toss the peanuts, hot pepper sauce and allspice until evenly coated; set aside.
- 2. In a 2-qt. microwave-safe glass bowl, combine sugar and corn syrup. Microwave, uncovered, on high for 4 minutes; stir. Add peanut mixture; stir until blended. Heat on high 4-5 minutes longer or until mixture becomes a light amber color ( mixture will be VERY hot). Stir in in butter. microwave 45 seconds longer. Quickly stir in baking soda and vanilla until mixture foams and becomes light-colored. Immediately pour mixture into prepared pan and spread as thin as possible with prepared spatula. Cool and break into pieces.
- 3. This was made using a 850-watt microwave.
Tips:
- To make sure the brittle is cooked properly, use a candy thermometer to monitor the temperature of the sugar mixture. It should reach 300°F (149°C) before you remove it from the heat.
- If you don't have a candy thermometer, you can also use the cold water test to check if the brittle is ready. Drop a small amount of the hot sugar mixture into a bowl of cold water. If it forms a hard, brittle ball, it is ready to be removed from the heat.
- Work quickly when pouring the brittle onto the baking sheet. The sugar mixture will start to set quickly, so you need to spread it out before it becomes too thick.
- If the brittle is too thick to spread, you can use a rolling pin to help you. Place the brittle between two sheets of parchment paper and roll it out until it is thin and evenly spread.
- Let the brittle cool completely before breaking it into pieces. This will help to prevent it from sticking to your hands or utensils.
- Store the brittle in an airtight container at room temperature. It will keep for up to 2 weeks.
Conclusion:
Peppery peanut brittle is a delicious and easy-to-make candy that is perfect for any occasion. With its sweet and spicy flavor, it is sure to be a hit with everyone who tries it. So next time you are looking for a tasty treat, give this recipe a try.
