2 ¼ tsp instant dry yeast
2 tsp honey
1½ tbsp olive oil
1 tsp salt
2½-3 cups all purpose flour
3 cups shredded mozzarella
6 ounce package of pepperoni
marinara sauce for dipping, if desired

Steps:

  • Add warm water to the bowl of the stand mixer with the dough hook attachment. Add in yeast and honey. Stir and allow it to rest for 5 minutes.
  • Add 2 cups of flour, salt, and oil. Mix to combine, 3-4 minutes on low speed. Slowly add remaining 1/2-1 cup of flour or until a smooth ball forms that pulls cleanly away from the sides of the bowl.
  • Cover bowl with plastic wrap and allow the dough to rest for 1 hour.

I make it for potlucks, holidays, football games, or a meal/appetizer at home. Although I consider this a somewhat advanced recipe, it is easy to master. It is my most-requested recipe! Serve alongside your favorite marinara sauce. Freezes very well!!

5 cups unsifted all-purpose flour, divided
3 tablespoons white sugar
1 (.25 ounce) package active dry yeast
2 teaspoons salt
1 ½ cups water
½ cup milk
3 tablespoons unsalted butter
2 eggs
32 slices provolone cheese
1 pound sliced pepperoni

Steps:

  • Add 2 cups flour, sugar, yeast, and salt to the bowl of a stand mixer fitted with a paddle attachment.
  • Combine water, milk, and butter in a saucepan over low heat. Heat until warm; butter does not need to melt. Gradually pour into the flour mixture, beating at medium speed until fully combined, about 2 minutes. Add remaining flour and continue mixing until a soft dough forms.

1 ½ cups warm water (110 degrees F/45 degrees C)
4 cups all-purpose flour
1 teaspoon salt
1 ½ teaspoons white sugar
1 tablespoon olive oil
1 teaspoon salt
1 ½ heads fresh broccoli
⅔ cup shredded provolone cheese
⅓ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 clove garlic, minced
1 cup diced pepperoni
¼ cup olive oil
salt and pepper to taste
1 egg, beaten
1 tablespoon water
2 tablespoons cornmeal

  • In a large bowl, proof the yeast by blending it with 1/4 cup of the warm water. Let stand until it bubbles.
  • In a large bowl combine the flour, salt, and sugar. Blend in the one tablespoon of olive oil by rubbing the mixture between the palms of your hands. Make a well in the dry ingredients. Add proofed yeast mixture and work in by hand. Gradually add the remaining warm water. Blend well and gather into a ball.
  • Place one teaspoon of olive oil on a wooden board. Knead dough on board until smooth. Place dough in a greased bowl and cover with plastic wrap and a towel. Let rise in a warm place for 1 1/2 hours or until doubled in bulk.
  • Meanwhile, prepare calzone filling: separate the broccoli tops from the stalks. Soak in cool water with 1 teaspoon salt for 15 minutes. Rinse in cool water. Cook in a large pot of boiling water for 5 minutes. Drain well and chop into small pieces. 2 florets: broccoli
1/2 lb. pepperoni
1 lb. provolone cheese, sliced

Pizza dough: homemade or purchased

Steps:

  • Dough: 4 cups flour 1 and 1/4 c. water yeast pkt - fast rising 1 t salt Mix yeast into water to disolve. Pour into flour and salt mixture. Mix with hand until forms a sticky ball. Put onto floured surface and kneed until smooth. Let rise covered for at least 2 hours. After risen punch down and kneed again on a floured surface. It should be ready to use. For bread: 1/2 lb pepperoni sliced (put however much you like) 2 good size broccoli florets, cooked but still green, chopped and mixed with garlic powder,salt and olive oil. 1 pound provelone cheese, sliced Roll dough out with a floured rolling pin on a floured surface into a big rectangle. About 12 x 16 or so. Then spread chopped broccoli on dough - but leave edges clear. Then place cheese on overlapping slightly until dough is covered - edges clear Then space sliced pepperoni on about 1-2 inches apart. Roll up starting at the shorter edge. Tuck ends underneath and seal seams as best you can. Put on stone or slightly greased cookie sheet or shallow pan and bake at 350 for about 25 -30 min or until golden color appears. If you want to get fancy you can spread some course corn meal on the pan for the bread to cook on. If you want to get really fancy you can brush on an egg wash over the bread. egg wash = egg beaten and 1 T water and sprinkle on some seseme seeds.

  • For the best results, use fresh broccoli florets. Frozen broccoli can be used, but it should be thawed and drained before using.
  • If you don't have a food processor, you can finely chop the broccoli by hand.
