3 (.25 ounce) packages unflavored gelatin
⅔ cup light corn syrup
2 cups white sugar
2 teaspoons vanilla extract

Steps:

  • Line a 9x9 inch baking dish with lightly greased foil or plastic wrap. Grease another piece of foil or plastic wrap to cover the top, and set aside.
  • Place 1/2 cup of water in the bowl of an electric mixer, and sprinkle gelatin on top of water to soak.
  • While gelatin is soaking, combine 1/4 cup of water, corn syrup, and sugar in a saucepan, and bring to a boil over medium heat. Boil the mixture hard for 1 minute.
  • Pour the hot sugar mixture into the gelatin mixture and beat on high for 12 minutes with electric mixer, until the mixture is fluffy and forms stiff peaks. Add vanilla and peppermint extracts, and beat just until blended.
  • Pour the marshmallow mixture into the prepared baking dish, using a greased spatula to smooth the top of the candy. Cover the candy with the reserved greased foil or wrap, and press down lightly to seal the covering to the top of the candy.

1/2 cup cold water

  • Generously grease bottom and sides of 11x7-inch (2-quart) glass baking dish with butter; dust with 1 tablespoon of the powdered sugar. In bowl of stand mixer, sprinkle gelatin over 1/2 cup cold water to soften; set aside.
  • In 2-quart saucepan, heat granulated sugar, corn syrup, salt and 1/2 cup water over low heat, stirring constantly, until sugar is dissolved. Heat to boiling; cook without stirring about 30 minutes to 240°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a ball that holds its shape but is pliable; remove from heat.
  • Slowly pour syrup into softened gelatin while beating on low speed. Increase speed to high; beat 8 to 10 minutes or until mixture is white and has almost tripled in volume. Add peppermint extract; beat on high speed 1 minute. Pour into baking dish, patting lightly with wet hands. Drop food color randomly onto top of marshmallow mixture. Pull table knife through food color to create swirl pattern over top. Let stand uncovered at least 8 hours or overnight.
  • Dust cutting board with about 1 tablespoon powdered sugar. Place remaining powdered sugar in small bowl. To remove marshmallow mixture, loosen sides from dish and gently lift in one piece onto cutting board. Using sharp knife greased with butter, cut into 1-inch squares (11 rows by 7 rows). 1 cup water, divided
3 (1/4-ounce) envelopes unflavored gelatin
1 1/2 cups sugar
1 cup light corn syrup
1/4 teaspoon salt

A 9-inch square metal baking pan; a stand mixer fitted with whisk attachment; a candy thermometer

Steps:

  • Brush bottom and sides of metal pan with some vegetable oil.
  • Put 1/2 cup water in bowl of stand mixer and sprinkle gelatin over it. Stir it briefly to make sure all the gelatin is in contact with water and let it soften while making the syrup.
  • Heat sugar, corn syrup, salt, and remaining 1/2 cup water in a small heavy saucepan over low heat, stirring until sugar has dissolved, then bring to a boil over medium heat, without stirring.
  • Put thermometer into syrup and continue boiling, without stirring, until it registers 240°F (soft-ball stage). Remove from heat and let stand until bubbles dissipate.
  • With mixer at low speed, pour hot syrup into gelatin in a thin stream down side of bowl. Increase speed to high and beat until very thick and the mixture forms a thick ribbon when beater is lifted, about 5 minutes. Beat in peppermint.
  • Quickly scoop about two-thirds of still warm marshmallow into another bowl. Add the red food coloring to the remaining one-third marshmallow and beat it to combine.
  • Working quickly, fill the prepared pan with alternating dollops of the white and pink marshmallow (it will be very sticky), then swirl a knife through the mixture to marble it. Smooth the surface with dampened fingertips. Let stand, uncovered, at room temperature until surface is no longer sticky and you can gently pull marshmallow away from sides of pan with your fingertips, 2 to 3 hours.
  • Using a sieve, dust a cutting board with confectioners' sugar. Use a spatula to pull sides of marshmallow from edge of pan, then invert onto cutting board. Dust top with confectioners' sugar. Cut lengthwise into 8 strips, then crosswise into eighths, to form a total of 64 squares.
  • Coat marshmallows, one at a time, in confectioners' sugar, shaking off excess.

3 (1/4-ounce) packages unflavored gelatin
1/2 cup cold water
2 cups granulated sugar
2/3 cup light corn syrup
1/4 teaspoon coarse salt
1/4 teaspoon pure peppermint extract
Confectioners' sugar, sifted, for coating

Steps:

  • Lightly spray a 9-by-9-inch baking pan with cooking spray. Line pan with plastic wrap, leaving a 2-inch overhang on all sides; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, sprinkle gelatin over 1/2 cup cold water; let stand for 10 minutes. In a medium saucepan, combine sugar, corn syrup, and 1/4 cup water. Place saucepan over medium-high heat and bring to a boil; boil rapidly for 1 minute. Remove from heat, and, with the mixer on high, slowly pour the boiling syrup down the side of the mixer bowl into gelatin mixture. Add salt and continue mixing for 12 minutes.
  • Add peppermint extract and mix until well combined. Spray a rubber spatula or your hands with cooking spray. Spread gelatin mixture evenly into pan using prepared spatula or your hands. Spray a sheet of plastic wrap with cooking spray and place, spray side down, on top of marshmallows. Let stand for 2 hours.
  • Carefully remove marshmallows from pan. Remove all plastic wrap and discard. Cut marshmallows into 2-inch squares using a sprayed a sharp knife. Place confectioners' sugar in a large bowl. Working in batches, add marshmallows to bowl and toss to coat. Marshmallows can be stored in an airtight container up to 3 days.

1 cup ice cold water, divided
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
1 teaspoon pure peppermint extract
1/2 cup confectioners' sugar
red food coloring
nonstick spray
4 to 6-ounces quality dark chocolate, chopped, optional
cake pop sticks
9 x13-inch pan, preferably a metal baking pan that doesn't have round corners
wax paper and aluminum foil
sifter, for powdered sugar
stand mixer with wire whisk attachment or a hand-mixer
non-stick spray
candy thermometer
very sharp knife or pizza cutter

Steps:

  • Lightly spray a 13x9-inch metal baking pan with nonstick cooking spray. Sift the powdered sugar and completely coat the bottom and sides of the pan. Return the remaining sugar to the bowl for later use. Place the gelatin into the bowl of a stand mixer along with 1/2 cup of the water. In a small saucepan combine the remaining 1/2 cup water, granulated sugar, corn syrup and salt. Place over medium high heat, cover and allow to cook for 3 to 4 minutes. Uncover, clip a candy thermometer onto the side of the pan and continue to cook until the mixture reaches 240°F, approximately 7 to 8 minutes. Once the mixture reaches this temperature, immediately remove from the heat. Turn the mixer on low speed and, while running, slowly pour the sugar syrup down the side of the bowl into the gelatin mixture. Once you have added all of the syrup, increase the speed to high. Continue to whip until the mixture becomes very thick and is lukewarm, approximately 12 to 15 minutes. Add the vanilla and peppermint extract during the last minute of whipping. While the mixture is whipping prepare the pans as follows. When ready, pour the mixture into the prepared pan, using a lightly oiled (or baking spray) off-set (or regular) spatula for spreading evenly into the pan. If adding the red food color, add some random drops and then swirl with a toothpick. Dust the top with enough of the remaining powdered sugar to lightly cover. (Reserve the rest for later.) Cover the pan with foil and shake up, down and sideways. Allow the marshmallows to sit uncovered for at least 4 hours and up to overnight. To cut the marshmallows, I had great success with a very sharp knife, sprayed with non-stick spray. Turn the marshmallows out onto a cutting board, lightly dusted with powdered sugar. Cut into 1-inch squares using sharp knife, or pizza wheel dusted with confectioners' sugar mixture. Once cut, lightly dust all sides of each marshmallow with the remaining mixture, using additional if necessary. TIP: I cut strips of marshmallow, the placed them back into the baking pan, dusted with extra powdered sugar. I then gently pressed sugar on all of the freshly cut sides, so that they wouldn't be sticky. That technique worked great! Store in an airtight container for up to 3 weeks. I bagged a few marshmallows in a clear cellophane bag (ordered on Etsy.com) and tied them with ribbon. They are perfect for hot chocolate. TO COAT IN CHOCOLATE: Cut the chocolate into small chunks and place in a glass bowl, over a pot of simmering water. Do not let the bowl touch the water! Once melted, stir to smooth. Have a baking sheet, covered with wax paper on standby. If using cake pop sticks, dip the stick into the chocolate at about 1/4-inch deep. Carefully plunge the stick into the marshmallow. Dip the bottom of the marshmallow to coat the bottom and slightly up the side. Set on the wax paper. Allow the dipped marshmallows to set for at least at hour. I placed 2 to 3 marshmallows in tall cellophane bags and tied them with a ribbon.

vegetable cooking spray
2 c granulated sugar
1 Tbsp light corn syrup
1 oz gelatin, unflavored
3/4 tsp peppermint extract
2 large egg whites
red food coloring drops

Steps:

  • 1. Coat an 8-inch square pan with cooking spray. Line the bottom and 2 sides with parchment paper, and then coat the parchment with cooking spray. Set aside.
  • 2. Put sugar, corn syrup and ¾ cup water in a small sauce pan. Cook over medium heat, stirring, until sugar is dissolved. Stop stirring and let the mixture come to a boil. Raise heat to medium high; cook until mixture registers 260 degrees on a candy thermometer.
  • 3. While sugar is boiling, sprinkle gelatin over ¾ cup water in a glass or other heat proof bowl. Let stand 5 minutes to soften. Place the bowl in the microwave, and head in 20 second increments until the gelatin is dissolved. Between each zap in the microwave, whisk the mixture. You want it to be warm and liquid, with no rubbery or grainy chunks. Add a few drops (3 or 4) of food coloring to the gelatin mixture. Stir in peppermint extract; set aside.
  • 4. Beat egg whites in the bowl of an electric mixer fitted with the whisk attachment until stiff (but not dry) peaks form. Whisk gelatin mixture into sugar mixture with mixer running, gradually add to egg whites. Mix on high speed until very thick, 12 to 15 minutes. This is the best time to adjust the color. You can add drops of food coloring to the fluff while it's whipping in the mixer. Add one drop of food coloring at a time, let it integrate, and continue adding until the fluff becomes the color you want it.
  • 5. Pour mixture into lined pan. Let the marshmallow stand, uncovered, at room temperature until firm, at least 3 hours or overnight. Once firm, turn the marshmallow block out onto a well oiled cutting board. Spray your knife with cooking spray and cut into squares. If you want to make different shaped marshmallows, I recommend cutting slices of marshmallow off of the block (like slicing a ham), oiling a cookie cutter and VERY SLOWLY cutting out the shapes. If you push down too fast, the shapes come out all wonky.
  • 6. Some flavor variations I have tried and recomend: Coconut: exchange extract for imitation coconut flavoring. Omit food coloring. Roll in toasted shredded coconut after marshmallows are cut. Banana: Exchange extract for imitation banana flavoring. Use yellow food coloring. Dip bottoms of cut marshmallows in chocolate, and top with a walnut, also dipped in chocolate. Citrus: Exchange extract for lemon or orange extract (NOT oil). Use corosponding food coloring. Dizzle with dark chocolate. Bailey's: Exchange extract for Irish Cream Concentrate (can be found in specialty food supply stores). Use one drop of red, yellow, and blue food coloring at a time while the mixer is running to make a light brown/cream color. Pumpkin Spice: Exchange extract for vanilla. Add 1 teaspoon of pumpkin pie spices to the sugar before boiling. I recomend using a bigger/taller pot than usual for boiling the sugar, because for some reason the addition of spices makes the sugar bubble and foam more than usual. Omit food coloring for natural color from the spices, or add orange food coloring for festive fall marshmallows.

3/4 oz unflavored gelatin (3 packets of knox gelatin)
3/4 c water, divided
2 c sugar
2/3 c light corn syrup
1/4 tsp salt
2 tsp vanilla
1/2-1 tsp peppermint extract (see notes)
red food coloring (optional)
1/4 c powdered sugar
2 Tbsp cornstarch

Steps:

  • 1. Line a 9x9 inch baking pan with plastic wrap and spray with nonstick cooking spray.
  • 2. In a large mixing bowl (or in your stand mixer bowl), sprinkle the gelatin over 1/2 cup cold water and allow it to dissolve for about 5-10 minutes.
  • 3. In a small saucepan, mix sugar, corn syrup and 1/4 cup water. Bring the mixture to a HARD boil and cook for one minute (you don't need a candy thermometer but be sure you get a rolling boil). Stir frequently.
  • 4. Pour the boiling syrup on top of the gelatin and whisk on high. If you have one, a stand mixer will make this job much easier.
  • 5. Add the salt and whisk on high for about 10-12 minutes or until mixture looks like soft meringue.
  • 6. At the end of the mixing, add the vanilla and peppermint extract. Pour half of the marshmallow mixture into the pan, then swirl around a few drops of red food coloring (if making peppermint marshmallows). Pour the rest of the mixture on top, then swirl in a little more food coloring. Allow the marshmallows to set at least 2-3 hours until firm.
  • 7. Lift the plastic wrap to remove from pan. Combine powdered sugar and cornstarch. Dip a knife or kitchen shears in powdered sugar mixture between each cut. Cut into whatever sized cubes you would like.
  • 8. Toss each marshmallow in the powdered sugar mixture. Store in a bowl or container that isn't completely sealed (so they don't get sticky/soggy). To coat some or all with chocolate, melt about 1/2 cup chocolate chips (semi-sweet, or your choice) along with a few drops of vegetable oil in microwave, stirring every 30 seconds until melted. Dip freshly cut marshmallows either half or completely coated and place on cookie sheet covered with a light coating of nonstick cooking spray. Sprinkle topping of choice while still wet. With the peppermint flavored marshmallows, crushed candy canes or peppermint candies are wonderful! You can leave out the peppermint extract and make vanilla flavored marshmallows which can be dipped. Sprinkle nuts and/or coconut on top, if desired.

2 envelopes unflavored gelatin
1 ⅓ cups white sugar
½ cup light corn syrup, plus

¾ teaspoon pure peppermint extract
red food coloring
¼ cup cornstarch

  • Line a 9x9 pan with plastic wrap, leaving enough overhang to cover the top. Spray plastic wrap lightly with cooking spray. Place the 6 tablespoons of warm water in a large bowl, and sprinkle gelatin on top. Let gelatin soften in the water for 5 minutes.
