  • In a large saucepan, heat half-and-half cream to 175°; stir in sugar and salt until dissolved. Whisk a small amount of the hot mixture into the eggs. Return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. That way you can plunge the pot into the water and stop the cooking quickly if it comes close to curdling. The recipe includes an optional bittersweet chocolate swirl that adds a sophisticated edge to this refreshing ice cream, but purists can feel free to leave it out.

  • In a medium saucepan, whisk together the egg yolks, sugar and salt until pale yellow. While whisking, slowly add the cream and the milk. Heat the mixture over medium-low heat, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon or about 170 degrees on an instant-read thermometer, 10 to 12 minutes.

Using small bowl or can as guide, trace three 4-inch-diameter circles on parchment on each baking sheet; turn parchment over (circles will show through). Brush parchment with melted butter. Whisk powdered sugar and 2 tablespoons sugar in small bowl to blend. Using electric mixer, beat egg whites and salt in large bowl until foamy and beginning to hold soft peaks.   • Place egg whites in large bowl; let stand at room temperature 30 minutes., Meanwhile, preheat oven to 375°. Line bottom of a greased 15x10x1-in. baking pan with parchment paper; grease paper. Just a quick pie I threw together in an attempt to recreate a "cake" served at the holidays by our local sports bar. One of my daughter's FAVORITES!! "Cook" time is freezer time (although just suggested, I made mine and froze overnight). **Update: As suggested by a reviewer - this really CAN be modified with your favorite flavor ice cream and garnished accordingly to suit the Holiday or event. ;)

2 graham cracker pie crust, ready made (I do 1 regular and 1 chocolate, a Keebler and an Oreo)
1 3/4 quarts dreyer's grand limited edition peppermint ice cream, softened (1 container)
16 ounces Cool Whip Topping

Steps:

  • Soften ice cream on counter until "workable" (soft enough to stir in Cool Whip but not too liquid).
  • Mix in full tub of Cool Whip- do not over blend as Cool Whip will become runny.
  • Scoop half of mixture into each of 2 pie crusts.
  • Smooth evenly in crust.
  • Cover with lid, if available, or wrap.
  • Place in freezer for at least 2 hours. (Could be less, I don't know as I always do ahead and leave them overnight).
  • Prior to serving, remove cover and smooth any voids (a slightly warm spoon run under warm water works well).
  • Garnish with crushed candy cane or starlight mints, chocolate curls, peppermint bark crumbles, or crushed Candy Cane Roca - my favorite.

1 1/4 cups sugar
2 1/2 teaspoons vanilla extract
36 hard peppermint candies

Steps:

  • In a bowl, stir the cream and sugar together until the sugar dissolves. Add the vanilla and stir to combine.
  • Set aside for about 15 minutes, stirring occasionally, to allow the flavors to blend.
  • Cover and refrigerate until chilled, at least 3 hours or up to 8 hours.
  • In a food processor, grind the peppermint candies by pulsing 2 or 3 times. Some of the candies will be more finely ground than others; small chunks of candy will add texture and interest to the final ice cream.
  • Pour the cream mixture into an ice cream maker and freeze according to the manufacturer's instructions.
  • When nearly frozen and the consistency of thick whipped cream, add the ground peppermint candies. Churn or stir just until mixed.

Steps:

  • Place 13x9-inch pan in freezer. Let ice cream stand at room temperature 15 minutes to soften. Line cold pan with plastic wrap. Spoon ice cream into pan; cover with another sheet of plastic wrap. Spread ice cream to even thickness. Freeze 1 hour. Heat oven to 350°F. Spray a second 13x9-inch pan with cooking spray. Make and bake cake mix as directed on box for 13x9- inch pan, using water, oil and eggs. Cool 10 minutes; remove from pan to cooling rack. Cool completely.
  • Cut cake horizontally to make 3 layers; split layers in half to make 6 total. Press 1 layer in bottom of 9x5-inch loaf pan. 1 1/2 cups whole milk
1 1/2 cups heavy cream
1/2 vanilla bean
1/2 cup granulated sugar
4 egg yolks
1 teaspoon peppermint extract
2 tablespoons peppermint schnapps
1/4 cup crushed soft peppermint candy (can substitute candy canes)

Steps:

  • Fill a medium saucepan with water.
  • Bring the water to a gentle simmer.
  • Place a glass bowl on top of the saucepan.
  • Add the milk and cream to the bowl.
  • Cut the vanilla bean in half, and then scrape the seeds into the milk and cream mixture.
  • Add the pieces of vanilla bean.
  • Slowly bring the milk mixture to a simmer, stirring occasionally, for about 20 minutes.
  • In a separate bowl add the granulated sugar and egg yolks.
  • Whisk the eggs and sugar together until the mixture is smooth and pale yellow in color.
  • Slowly whisk some of the hot milk mixture into the egg yolks.
  • Then whisk all of the egg yolk mixture back into the bowl of milk.
  • Stirring constantly, cook the milk mixture until it thickens and coats the back of a wooden spoon, about 15 more minutes.
  • Pour the milk mixture through a strainer into a bowl.
  • Let the custard cool to room temperature, then cover and refrigerate overnight.
  • The next day, remove the custard from the refrigerator.
  • Pour the chilled custard into an ice cream maker and process.
  • Just before the ice cream is at the desired consistency, pour in the peppermint extract, peppermint schnapps and crushed peppermint candies.
  • Continue to process the ice cream for another 5-10 minutes.
  • Note: the ice-cream will be “soft-serve” at this stage.
  • You can spoon the ice cream into a bowl, cover it and place it in the freezer until ready to serve.
  • Let the ice cream thaw on the counter about 5 minutes before serving.

1/2 cup unsweetened cocoa powder

1 large egg, room temperature
3 1/2 quarts (about) peppermint stick ice cream, slightly softened
Candy Brittle:
1 1/2 cups sugar
1/2 cup water
1 1/2 tablespoons light corn syrup
1 to 2 cups assorted candies (such as sliced gummy candies, spice drops, Swedish mints, butter mints, rock candy pieces, and candy cane pieces)
Chocolate Sauce:
1/2 cup water
8 ounces bittersweet or semisweet chocolate chips

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter 15x10x1-inch baking sheet; line with parchment. Butter parchment. Whisk first 4 ingredients in large bowl. Melt butter in medium saucepan. Remove from heat. Add chocolate chips; stir until melted. Whisk in 3/4 cup water, cocoa, and vanilla until blended. Whisk in egg. Add to dry ingredients; whisk to blend. Pour batter onto prepared baking sheet.
  • Bake cake until tester inserted into center comes out with some moist crumbs attached, about 22 minutes. Cool cake on baking sheet on rack 15 minutes. Run knife around pan sides to loosen cake. Turn cake out onto sheet of foil; cool. Cut cake crosswise into 3 equal strips. Freeze cake strips 1 hour.
  • Place 1 cake strip on platter. Working quickly, spoon 3 1/2 cups peppermint ice cream in dollops over cake; spread evenly to edges. Top with second cake strip; spoon 3 1/2 cups ice cream in dollops over cake; spread evenly to edges. Top with third cake strip; freeze 1 hour. Spread enough remaining ice cream over top and sides of cake to cover generously (about 6 cups). Freeze until firm, about 3 hours.
  • For candy brittle:
  • Place 20-inch-long sheet of foil on work surface. Mark off 16x12-inch rectangle. Stir sugar, 1/2 cup water, and corn syrup in heavy small saucepan over medium-low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Increase heat and boil without stirring until candy thermometer registers 300°F, tilting saucepan slightly to submerge bulb, about 15 minutes.
  • Being very careful (syrup is extremely hot), pour boiling syrup in wide zigzag lines across foil. Working quickly and using offset metal spatula, spread syrup evenly to 16x12-inch rectangle. Immediately sprinkle generously with candies, pressing larger pieces into syrup to adhere (do not touch hot syrup). If syrup hardens before all candies have been applied, slide foil with brittle onto large rimless baking sheet and place baking sheet directly over burner set on high heat to soften syrup, about 10 seconds, rotating sheet, then remove from heat and immediately apply remaining candies. Cool completely.
  • Starting at 1 end of brittle, break off irregular pieces, peeling foil as you go. Press brittle upright, candy side out, onto top and sides of cake and freeze. DO AHEAD: Cake can be made 2 days ahead. Cover and keep frozen.
  • For chocolate sauce:
  • Bring water to simmer in small saucepan. Remove from heat. Add chocolate; whisk until smooth. DO AHEAD: Sauce can be made 2 days ahead. Cover and chill. Rewarm sauce before continuing.
  • Slice cake and serve with sauce.

1 pint superpremium vanilla ice cream, softened slightly
1/4 teaspoon pure peppermint extract
1 cup finely crushed peppermint hard candies (1/4 lb)
16 chocolate wafers such as Nabisco Famous

Steps:

  • Stir together ice cream (reserve pint container), extract, and 1/2 cup crushed candy in a bowl until combined.
  • Transfer mixture to pint container and freeze until just firm enough to scoop, about 1 hour.
  • Working very quickly, scoop ice cream onto flat sides of 8 wafers (1 scoop per wafer), then top with remaining 8 wafers, flat sides down. Wrap each sandwich individually with plastic wrap and freeze until firm, about 1 hour. Unwrap sandwiches and roll edges in remaining 1/2 cup crushed candy. Rewrap and freeze until firm, about 1 hour.

2 tablespoons unsalted butter
2 cups diced Fuji and Granny Smith apples
2 tablespoons apple cider
1/2 teaspoon brown sugar
1/4 teaspoon ground cinnamon
28 ounces vanilla ice cream
2 cups whole milk
1/2 cup crushed peppermint candy
10 shortbread cookies

Steps:

  • Place the butter and apples over medium heat in a heavy-bottomed skillet. Cook until the apples are tender, about 5 minutes. Deglaze with the apple cider and immediately add the brown sugar and cinnamon. Cook until the apples are soft, an additional 3 to 4 minutes. Set aside to cool to room temperature.
  • Add the ice cream, milk, half of the crushed peppermint candy and 4 shortbread cookies to a blender, along with the cooled apples. Blend until smooth. Pour the contents into 6 tall milkshake glasses and top each with more peppermint candy and a shortbread cookie.

2 large graham cracker pie crust, ready made (i do 1 regular and 1 chocolate, a keebler and an oreo)
1 3/4 qt dreyer's grand limited edition peppermint ice cream, softened (1 container)
16 oz cool whip topping
candy cane roca, chocolate sauce, etc (garnish as desired)

Steps:

  • 1. Soften ice cream on counter until "workable" (soft enough to stir in Cool Whip but not too liquid).
  • 2. Mix in full tub of Cool Whip- do not over blend as Cool Whip will become runny.
  • 3. Scoop half of mixture into each of 2 pie crusts.
  • 4. Smooth evenly in crust.
  • 5. Cover with lid, if available, or wrap.
  • 6. Place in freezer for at least 2 hours. (Could be less, I don't know as I always do ahead and leave them overnight).
  • 7. Prior to serving, remove cover and smooth any voids (a slightly warm spoon run under warm water works well).
  • 8. Garnish with crushed candy cane or starlight mints, chocolate curls, peppermint bark, chocolate sauce, or crushed Candy Cane Roca - my favorite.
  • 9. Enjoy! :)

30 cream-filled chocolate sandwich cookies (such as Oreo®)
½ cup butter
2 cups confectioners' sugar
9 tablespoons unsweetened cocoa powder
1 tablespoon vegetable oil
2 eggs, beaten
½ gallon peppermint ice cream

Steps:

  • In batches of 5 cookies at a time, pulverize the cookies in a blender until fine. Set the last batch of 5 crumbled cookies aside; place the remaining cookies into the bottom of a 9x13-inch pan, and smooth into a crust.
  • Melt butter in a saucepan over low heat, and stir in the confectioners' sugar, cocoa, and vegetable oil into a smooth mixture. Pour in the beaten eggs, and whisk constantly until the mixture is hot (do not boil) and thickened to a fudgy consistency, about 5 minutes. Pour the thickened fudge over the crushed cookie crust, smooth into a layer, and freeze cake at least 30 minutes.
  • Set the peppermint ice cream out to soften for about 10 minutes. Cut the softened ice cream into slices, and place the ice cream slices over the fudge filling. Smooth the ice cream out into an even layer, and sprinkle reserved crushed cookies on top for garnish. Freeze the dessert for 1 to 2 hours before serving.

I found this recipe online somewhere and I wanted to post it here for safe keeping (and sharing). I love peppermint ice cream, so this looks great.

2 1/2 cups heavy cream
1 1/2 cups milk
8 large egg yolks
3/4 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons peppermint extract
1/2 cup crushed candy canes or 1/2 cup hard peppermint candy

Steps:

  • In a saucepan over medium heat, warm the milk, sugar, and salt. Make sure the sugar and salt completely dissolve.
  • In a separate bowl, whisk together the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly. (Make sure you do this slowly, or the eggs will be cooked from the heat of the milk mixture).
  • Scrape the egg-and-milk mixture back into the saucepan over medium heat. Stir the mixture constantly scraping the bottom as you stir, until the mixture thickens and coats the spatula. This should take 5-7 minutes.
  • Pour the heavy cream into a bowl. Then, slowly pour the custard into the chilled heavy cream. Cool for about half an hour in the refrigerator.
  • When the mixture is chilled, add peppermint extract. You may need more depending on your tastes and the strength of the extract you use.
  • Freeze in your ice cream maker according to the manufacturer's instructions.
  • Near the end of the freezing process, add in the crushed peppermint candy.
  • Store in an airtight container in your freezer.

NO-CHURN PEPPERMINT BARK ICE CREAM

I was a no-churn ice cream skeptic, but this recipe made me a believer. It's incredibly creamy from the 2 1/2 cups of heavy cream (a little more than you'll find in other no-churn recipes). The bits of peppermint bark will linger on your tongue after the cold and creamy goodness of the rest of the ice cream melts. One 14.5-ounce can sweetened condensed milk
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 cup chopped peppermint bark (see Cook's Note)
Hot coffee or espresso, for serving, optional

Steps:

  • Whip the heavy cream to stiff peaks in a large bowl with an electric hand mixer (though you can whip by hand if you'd like). Set aside.
  • Add the sweetened condensed milk to another large bowl. Stir in the vanilla and peppermint extracts.
  • Fold the whipped cream into the condensed milk just until no streaks remain. Gently fold in the chopped peppermint bark (reserve a few pieces to sprinkle on top). Pour into a 9-by-5-inch loaf pan. Sprinkle the reserved pieces of peppermint bark on top. Cover with plastic wrap and freeze overnight, or at least 6 hours.
  • Scoop the ice cream into a cup and try to not eat all of the remaining ice cream. Bonus points if you pour coffee on top.

2 large egg yolks
2 teaspoons vanilla
1 (14 ounce) can fat-free sweetened condensed milk
2/3 cup crushed peppermint candy (about 25 candies)

Steps:

  • Combine 1 1/4 c 2% milk and egg yolks in heavy saucepan over medium heat.
  • Cook until mixture is slightly thick and coats the back of a spoon (about 8 minutes), stirring constantly (do not boil). Cool egg mixture slightly.
  • Combine egg mixture, 1 1/4 c 2% milk, vanilla and condensed milk in a large bowl. Cover and chill completely.
  • Stir in crushed candies.
  • Pour mixture into a freezer can of an ice-cream freezer, freeze according to manufacturer's instructions.
  • Spoon ice cream into a freezer-safe container, cover and freeze 1 hour or until firm.

2 box ghiardelli double chocolate brownie mix
2 egg
2/3 c oil vegetable or canola
1/2 c water
FILLING
1/2 row oreo cookies optional
1 large container peppermint stick ice cream
GANACHE
1 c chocolate chips dark or semi sweet
3/4 c whipping cream
GARNISH
1/2 bag(s) candy cane kisses cut in half optional
1 crushed candy cane optional

Steps:

  • 1. Grease 2 8 inch isquare pans or 2 9x9 pans. Mix brownie mix with the oil, water and eggs Do not beat. Stir to incorporate well. Pour in to pans and bake at 350 degree's per directions on boxes.
  • 2. Line stainless steel, or freezer safe 3 quart bowl with plastic wrap. Let wrap over hang on sides about 4-5 inches all the way around bowl. Remove brownies from oven and cool until warm. Cut brownies in rows not squares. Trim off hard edges.
  • 3. Press brownie strips inside lined bowl. Mold to bowl with out flattening brownies, and squish sides of brownie pieces together. It is ok to be an inch from top of bowl. Fill brownie bowl with half the container of softened ice cream. Sprinkle chopped oreo's over ice cream. Top with remaining ice cream and smooth top. Turn excess brownie edges in over ice cream, make as level as possible. Pull excess plastic wrap over to cover ice cream . Place bowl in freezer. Freeze for several hours to overnight until completely frozen.
  • 4. Make Ganache when ready to frost. Remove ice cream from freezer. Pull ice cream from bowl grasping plastic wrap. Turn round side up on freezer safe plate that is trimmed with wax paper to catch chocolate dripping. Plastic plate, spring form pan bottom, or foil lined card board will work.
  • 5. In a saucepan mix chocolate chips with whipping cream over medium heat. Stir until melted and chocolate is smooth. Remove from heat.cool for a lityle while before pouring.
  • 6. Start pouring Ganache over top. Pour in a circular motion around top. Alowing it to drip down all sides. Spoon some on spots missed. press kisses in to bottom sides of cake. Sprinkle top with crushed candy cane. Place Bomb back in freezer uncovered until chocolate sets. After it sets. cover with wax paper and plastic or foil until ready to serve. Set out to soften a bit before cutting.

Tips:

  • For a smoother texture, use heavy cream instead of milk.
  • Add a pinch of salt to the ice cream base to enhance the sweetness of the peppermint.
  • Use fresh peppermint leaves for the best flavor. If you don't have fresh leaves, you can use 1 teaspoon of dried peppermint.
