Heat, stirring frequently, until the mixture is evenly melted. (Alternatively, this can be done in the microwave in a microwave-safe container in 15-second increments until fully melted.) Let the glaze cool for 5 minutes.

3/4 cup butter
2 1/4 cups sugar, divided

1 (1-ounce) bottle red liquid food coloring

1 1/2 cups all-purpose flour
1/8 teaspoon salt
1/2 (8-ounce) package cream cheese, softened
2 egg whites
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350°F. Line bottom and sides of a 13- x 9-inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil. Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in 2 cups sugar. Add eggs, 1 at a time, whisking just until blended after each addition. Add food coloring, peppermint extract, and 1 teaspoon vanilla. Gently stir in 1 1/2 cups flour and 1/8 teaspoon salt. Pour batter into prepared pan. Beat cream cheese and remaining 1/4 cup sugar at medium speed with an electric mixer until fluffy. Add egg whites and remaining 1 teaspoon vanilla, and beat until blended. Stir in 2 tablespoons flour until smooth. Drop cream cheese mixture by heaping tablespoonfuls over batter in pan; gently swirl with a knife. Bake at 350°F for 30 to 32 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely in pan on a wire rack (about 1 hour). Lift brownies from pan, using foil sides as handles. Gently remove foil; cut brownies into squares.

8 ounces unsweetened chocolate, chopped
4 teaspoons instant coffee granules
1 tablespoon boiling water
5 eggs
3-3/4 cups sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
1-2/3 cups all-purpose flour
1/2 teaspoon salt
2 cups coarsely chopped walnuts
44 chocolate-covered peppermint patties

Steps:

  • Line a 13-in. x 9-in. baking pan with foil. Melt 1 tablespoon butter; brush over foil and set aside. In a microwave, melt chocolate and remaining butter; stir until smooth. Cool slightly. Dissolve coffee granules in boiling water., In a large bowl, beat eggs and sugar until blended. Beat in the vanilla, almond extract, coffee mixture and chocolate until fluffy. Combine flour and salt; gradually add to chocolate mixture. Stir in walnuts., Pour half of the batter into prepared pan. 1 (22 1/2 ounce) package brownie mix (I use Betty Crocker with the Hershey's syrup pouch)
2 cups powdered sugar
2 tablespoons milk
1/2 teaspoon peppermint extract
4 tablespoons butter
3 ounces semi-sweet chocolate baking squares (or use 3 oz of chips)
3 tablespoons butter
2 candy canes, crushed (or use peppermint candies) (optional)

Steps:

  • Bake brownies according to package directions in a 9 x 13" pan. Cool. Blend sugar, milk, peppermint extract and 4 tbsp butter until smooth; spread over cooled brownies. Melt chocolate and 3 tbsp butter in microwave (do not overcook, just until melted. I do 12 seconds at a time, stir, 10 more seconds, etc). When chocolate is melted, stir and spread over the peppermint icing. Sprinkle with crushed candy canes if you choose. When chocolate is set, cut into squares.

¼ teaspoon salt
1 cup all-purpose flour
1 (5.32-ounce) bag Ghirardelli Dark Chocolate with White Mint Filling Squares™, unwrapped (about 10 squares)
4 small candy canes, crushed (about ¼ cup)
To serve these at a party, or to package them nicely to give away for the holiday season, cut the brownies smaller and place them in paper candy cups.

  • Preheat the oven to 350°F. Spray a 9-inch square baking pan with cooking spray and dust with flour, tapping out any excess. In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the unsweetened chocolate and butter, stirring occasionally until smooth. Cool to room temperature. In a large bowl with an electric mixer or whisk, beat the eggs, sugar, vanilla, peppermint extract, and salt until combined. Beat in the chocolate mixture. Gently stir in the flour. Pour the batter into the prepared pan. Bake for about 45 minutes, or until a tester inserted into the brownies comes out clean.
