2 red or green jalapeños, halved lengthwise
2 tablespoons vegetable oil
1/4 cup soy sauce
1/4 cup fish sauce
2 tablespoons minced ginger
1 tablespoon minced garlic
2 tablespoons sugar
3 tablespoons roughly chopped Thai basil

1/2 teaspoon fresh lime juice
1/2 cup reduced-fat sour cream
4 (8 inch) flour tortillas
3/4 cup pepper jack cheese, shredded
1 cup cooked chicken breast (rotisserie)
1 cup thinly sliced peeled firm ripe peach
4 teaspoons chopped fresh cilantro
