1½ pounds rib eye steaks or strip steaks
¼ cup Worcestershire sauce
¼ cup red wine vinegar
¼ cup extra virgin olive oil
1 teaspoon garlic chili sauce (available in Asian section of any supermarket)
2 tablespoons granulated sugar
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper
2 tablespoons prepared horseradish
1 tablespoon mayonnaise
1 tablespoon sour cream
4 ounces cream cheese (softened)
1 teaspoon lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 teaspoon Worcestershire sauce
Dash of Tabasco sauce
4 ounces shallots sliced into quarter thick slices
2 cups vegetable oil
inch French baguette (cut on the bias into 12 half slices)
1 tablespoon butter softened

Steps:

  • Approximately 1½ to 2 hours before serving, trim beef of all fat and gristle, leaving about one pound of meat. Slice on the bias into slices about three to four inches long and about an inch and a half wide. Place in a gallon zip lock bag.
  • Mix all of the marinade ingredients and add to the bag. Squeeze and move around so all pieces get covered. Seal and refrigerate ninety minutes to two hours, longer if you are using a cheaper cut of meat.
  • While beef is marinating, make spread by whipping all ingredients and refrigerating until later.
  • Heat a ribbed grill pan over medium high heat.
  • Lightly butter both sides of each piece of bread and grill to form grill marks. Wipe the grill pan and remove from heat.
  • Heat a medium sauce pan with the two cups of oil to 275 degrees F, no higher. Use a candy thermometer to gauge. Drop the shallots in and cook for about eight minutes or until lightly golden brown. Move them to a plate to hold. Reheat the same oil to 350 degrees F. Place a strainer over a metal bowl and have this standing by. Also cover a plate with paper towels. Once the oil is at 350 degrees, drop the shallots back in for only a few seconds to crisp then pour the whole pan, oil and shallots, into the metal bowl with the strainer. Lift the strainer out and shake out shallots onto the paper towels. Set these aside.
  • Remove the meat from the bag and discard the marinade. Lay out the pieces of beef and pat dry on both sides.
  • Heat the grill pan to medium high to high and brush some of the oil from the shallot bowl of oil onto the grill grates and fry one third of the beef, laying each piece down then after a minute, flipping with tongs. They will cook quickly. Once cooked, move to a plate or platter. Wipe pan between batches and cook the remaining two batches.
  • To assemble, divide the spread between the twelve slices of grilled bread, top with the beef then again with the crispy shallots.

1 1/2 lbs roast beef, peppered (right from your grocers deli - 1/4-inch thick slices)
1/4 cup marsala wine
3/4 cup beef broth
3 cups onions, cut in quarters and thin sliced (2 large)
1 teaspoon butter
1 teaspoon olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
1 head garlic, peeled
1 cup olive oil
2/3 cup sour cream
2 1/2 tablespoons prepared horseradish (more or less according to taste)
1/2 teaspoon white wine vinegar
salt
pepper
1 tablespoon fresh chives, fine chopped

Steps:

  • Lets start with all the components and make them one at a time.
  • Horseradish Cream -- Just mix the sour cream, prepared horseradish (not creamy), vinegar, and season with a little salt and pepper to taste. Refrigerate until ready to use. The chives should be added right before serving.
  • Onions -- To a medium to large sauce pan, add the butter and olive oil and bring to medium heat. Add the onions and slowly begin to caramelize them - don't rush this. It will take a good thirty minutes, but it isn't hard. After 5 minutes add a pinch of salt and sugar and continue to stir now and then. After 15 minutes the moisture (water) from the onions will start to evaporate and the onions begin to caramelize. Once they get golden brown, remove, let cool and refrigerate until you are ready to use them. They can be reheated in the microwave in just a minute when you are ready to make the crostini.
  • Garlic Oil -- In a small sauce pan on medium heat, add the oil and garlic. Cook for just a minute on medium and then reduce to medium low and simmer for about 20 minutes until the garlic is golden brown. Remove the garlic and you have wonderful garlic oil. You can always buy a bottle which is expensive, and not nearly as good.
  • Beef -- Add the beef broth and marsala to a small bowl to a small pan and heat until warm. Add in the beef slices and cook just a minute or two until the beef is warm. You don't want to over cook it, it doesn't take long.
  • Crostini -- Slice and grill or broil just until golden brown on each side. Remove and brush each slice with some of the garlic oil.
  • Onions -- As the bread is toasting and the beef warming up - heat up your onions for just 1 minute in the microwave, they are all done you just want them warm.
  • Horseradish Cream -- Don't forget to stir in the chives right before you are ready to serve.
  • Toppings -- Top each garlic crostini with some of the warmed caramelized onions, then a slice or two of beef, then a little of the horseradish cream.

1 lb. flank steak (cleaned)
1 French baguette (sliced into 1/4-inch pieces)
1/2-cup extra-virgin olive oil
1 Bermuda red onion
2 cups organic Arugula
6 cloves garlic (peeled)

Steps:

  • Slice the baguette horizontally and toss with olive oil and kosher salt. Place on a cookie sheet and toast until crostini is golden brown and moist in the middle. Remove from oven and let cool. Grill or oven broil your flank steak and salt to taste. Cook for 15 minutes on each side or until meat is prepared to your liking.

8 oz sliced swiss cheese
1 lb Roast beef or Beef tenderloin (thinly sliced)
4 oz horseradish aioli*
4 tbp olive oil ((split))
salt and pepper to taste
basil - for garnish ((optional))

Steps:

  • Heat 2 tablespoons of olive oil in a sauté pan over medium-low heat. Add the sliced onions and cook low and slow for 30-40 minutes until the onions have a nice caramelized color. Stir the onions every 5 minutes but refrain from touching them too often. Turn your stove down if the onions begin to get crispy or too dark.
  • While the onions are caramelizing, you can begin preparing your crostini. Preheat your oven to 400 F. Slice the baguette into twenty-four 1/2 inch wide slices. Lay the slices flat on oiled cookie sheet. Brush the top of each crostini with olive oil and sprinkle with salt and pepper. Bake for 5 minutes.
  • Remove the crostini's from the oven. Slice the Swiss cheese into pieces that just cover each crostini. Top each crostini with the sliced Swiss cheese & sliced beef. Put the crostini's back in the oven for another 5 minutes or until the cheese has melted.

4 tablespoons extra-virgin olive oil
2/3 cup roasted red peppers, preserved in water, drained well and patted dry
1/3 cup mayonnaise
Salt and freshly ground black pepper
1 (1 1/2-pound) piece beef tenderloin, trimmed
3 tablespoons drained capers, chopped
Coarse sea salt, to serve

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Drizzle 3 tablespoons oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the bell peppers and mayonnaise in a food processor until smooth and creamy. Season the bell pepper mayonnaise, to taste, with salt and pepper. Cover and refrigerate.
  • Tie the beef with kitchen string to help maintain its shape. Season the beef with salt and pepper. Heat the remaining 1 tablespoon oil in a heavy small skillet over medium heat. 3 cloves garlic, crushed
1/2 teaspoon hot red pepper flakes
1 tablespoon whole black peppercorns, cracked (I fold them in a paper towel and bash them with a hammer)
1 tablespoon minced fresh rosemary leaves
1/3 cup olive oil
2 pounds London broil (top sirloin), cut 1 1/2 inches thick
2 teaspoons kosher salt

Steps:

  • Combine the garlic, hot red pepper flakes, peppercorns, rosemary, and olive oil in a Zip-loc bag. Add the beef, coating it with the marinade. Squeeze all the air out of the bag so the beef is enveloped by the marinade, and refrigerate for at least 6 hours, or overnight.
  • Preheat the grill or broiler for 15 to 20 minutes. Sprinkle the steak with the salt and grill or broil to rare or medium rare, depending on your preference.
  • The cooking time will depend on the thickness and temperature of the beef, so push at the steak with your finger, and if it still feels totally raw in the middle, give it a little longer.
  • This is one of the things that cooks just need to intuit and learn to read the silent signs. Better under than overcooked, so check often, and if your finger defeats you, cut the steak with a knife and have a look. Let the steak rest for at least an hour, to get the juices back into the meat, then cut into short, very thin slices. (The best knife for slicing is a bread knife with wavy rather than pointed teeth, which cuts through beef amazingly well.) Serve on Grilled Garlic Crostini.
  • Arrange a few shaved slices of beef on each piece of bread, top with a pungent dot of Horseradish Cream, scatter with minced Italian parsley, and dust on a little kosher salt.

1 tablespoon butter
2 onions, sliced
1 cup sliced mushrooms
4 (200 g) pieces steak fillets
cracked black pepper, for coating
1 tablespoon oil, extra
3 garlic cloves, crushed
140 g tomato paste (see Notes)
1/2 cup water
2 teaspoons balsamic vinegar
mashed potatoes, for serving

Steps:

  • Heat the oil and butter in a pan over a low heat.
  • Add the onions and cook for 10-12 minutes or until the onions are golden brown and caramelised. Add the mushrooms in the last five minutes. Set aside and keep warm.
  • Lightly coat both sides of the steak with cracked black pepper; heat extra oil in the pan; and pan fry the steak until it is cooked as you like it.
  • Remove the meat from the pan and keep it warm; add the garlic to the pan and sauté it for 1 minute; stir in the tomato paste, water and balsamic vinegar and simmer for 1-2 minutes.
  • Place the steak on a serving of mashed potato, top with the caramelised onions and mushrooms and drizzle with the tomato sauce.
  • Notes: I have not yet made this recipe, but when I do, since tomato paste disagrees with me (I find it too sharp), I shall be using a can of tomatoes, drained, and a teaspoon of a wonderful Australian spice Bush Tomato. If you can get hold of Bush Tomato, it's wonderfully aromatic and flavoursome without whatever is the ingredient in tomato paste that makes it sharp.

1 package (4 oz) chèvre (goat) cheese, softened

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Stir in onions; cook uncovered 10 minutes, stirring every 3 to 4 minutes.
