Categories     main-dish

Time 2h10m

Yield 8 to 10 servings

Number Of Ingredients 12

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Provided by Dave Lieberman

Categories     main-dish

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 15

2 pounds ground turkey (preferably dark meat only)
2 eggs
3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
1 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
1/2 cup plain bread crumbs
1 small onion, finely chopped
2 cloves garlic, pressed
3 ounces tomato paste (from reserved 1/2 can)
1 small onion, roughly chopped
1 clove garlic, peeled
1 small red pepper, seeded, cored, and roughly chopped
1 cup water
1/2 teaspoon salt
15 grinds black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.
  • Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

RED PEPPER TURKEY MEATLOAF

Red Pepper Turkey Meatloaf image

A very nice, soft meatloaf. Originally an Ellie Krieger recipe. I have made this with both the turkey and the beef and while I liked it both ways, I actually preferred the turkey. The sauce toppping is not sweet, which we very much liked, but if you are used to sweeter topping, sprinkle some brown sugar Splenda into the tomato sauce or use some ketchup instead (just squirting some over the top to taste).

TURKEY MEATLOAF WITH ONION AND GREEN PEPPER

Turkey Meatloaf with Onion and Green Pepper image

Adding sauteed vegetables to ground turkey breast adds both flavor and moisture to this Tex-Mex-inspired meatloaf. It's a great cooking hack for making low-fat turkey and chicken burgers, too. If you have leftover roasted or grilled peppers and onions in your fridge, you can chop them up and add them to the turkey mixture instead of the sauteed veggies.

Tips:

  • Choosing the right ground turkey: Opt for ground turkey with a fat content of around 15-20% for a moist and flavorful meatloaf. Drain any excess grease before using.
  • Seasoning is key: Don't be afraid to amp up the flavor with a combination of herbs and spices. This recipe uses a blend of garlic powder, onion powder, paprika, dried thyme, and salt and pepper.
  • Add moisture: Incorporating moisture-rich ingredients like bell peppers, zucchini, and eggs helps keep the meatloaf juicy and prevents it from becoming dry.
  • Binding agents: Breadcrumbs, oats, or crushed crackers act as binding agents, helping to hold the meatloaf together. You can also use almond flour or ground flaxseed for a gluten-free option.
  • Baking temperature and time: Bake the meatloaf at a high temperature (400°F or 200°C) for an initial 15 minutes to help sear the outside and seal in the juices. Then, reduce the temperature to 350°F or 175°C and continue baking until the internal temperature reaches 165°F or 74°C.
  • Glaze it up: To add a glossy and flavorful crust, brush the meatloaf with a glaze made from ketchup, brown sugar, and Dijon mustard during the last 15 minutes of baking.

Conclusion:

This pepper turkey meatloaf is a delectable and versatile dish that combines the savory flavors of ground turkey, bell peppers, zucchini, and a blend of herbs and spices. With its juicy texture and a hint of heat from the pepper, this meatloaf is sure to satisfy your taste buds.
