This comes from Better Homes & Gardens (celebrating the promise) I really like this chicken hope you do too! It has you broil it but I usually just bake at 350 for about 30 min. It also calls for 6 chicken breasts but can be reduced I usually only make about 3 due to my family size. Prep time is also marinating time.

6 boneless skinless chicken breast halves
1 teaspoon lime zest, finely shredded
1/3 cup lime juice
3 tablespoons cooking oil
1 teaspoon dried thyme or 1 teaspoon basil, crushed
1/2 teaspoon black pepper, coarsly ground
1/4 teaspoon salt
2 garlic cloves, minced
salsa (optional)
lime wedge (optional)

Steps:

  • Place chicken breast halves in a resealable plastic bag set in a shallow dish. For marinade, stir together lime peel, lime juice, oil, thyme (or basil), pepper, salt, and garlic. Pour over chicken seal bag. Marinate in refrigerator for 30 minutes.
  • Preheat broiler. Drain chicken, reserving marinade. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 6 minutes or until light brown.
  • Turn chicken and brush lightly with reserved marinade. Discard any remaining marinade. Broil for 6 to 8 minutes more or until chicken is no longer pink (170'F). If desired serve with salsa and lime wedges.

1/2 teaspoon lime peel
2 garlic cloves, minced
1/4 cup lime juice
1 teaspoon pepper
1 tablespoon olive oil

Steps:

  • Combine all ingredients in freezer bag.
  • Marinate overnite or put in freezer for use at a later date.
  • When ready to cook (defrost if frozen) either grill, bake for 30min at 350 degrees, or put in crockpot on low for 4-5 hours.
  • Serve over rice.

2 1/2 lb meaty chicken pieces (i prefer bone in thighs)
1/2 tsp finely shredded lime peel
1/4 c lime juice
1 Tbsp cooking oil
1 clove minced garlic
1 tsp ground black pepper
1 tsp dried basil & mexican oregano
1/4 tsp salt
1 roma tomato, chopped (optional)
1 Tbsp cilantro, fresh chopped finely (optional)
1/4 c onion, minced (optional)
1 jalapenos, fresh seeded/minced (optional)
1/3 c green pepper &/or red peppers, chopped (optional)
1 pinch optional spices you can use: ground cumin (or) ground red pepper, i use about a pinch of either one i prefer to use at the time.

Steps:

  • 1. Rinse chicken pat dry. Skin side down on unheated rack of broiler pan broil 4-5 inches from the heat about 20 min or until lightly browned
  • 2. Meanwhile, for lime glaze, in bowl stir in lime peel, lime juice, oil, garlic, black pepper, basil and salt brush chicken with the glaze. Turn chicken; brush with more glaze. Broil for 5-15 min more or until tender and no longer pink. Brush often with lime glaze during last 5 min of cooking. (I prefer to BAKE this, will add below that option)
  • 3. ***Another way I have made this is by BAKING in oven. just adding all Ingredients in oven proof casserole dish/covered, baked for 350 for approx 45 min or until no longer pink. I have also use this juice in the dish to serve over the chicken and my Spanish rice or white rice (that is normally what I serve w/ it)**** I tend to cook it this way, it's much EASIER for me! I love simple and easy!

2 teaspoons Finely shredded lime peel
1/2 cup lime juice
2 tablespoons peanut oil
4 cloves minced garlic
2 teaspoons dried thyme
1 teaspoon black pepper
1/2 teaspoon salt

  • Skin chicken, if needed. Place chicken pieces bone side up, on unheated rack of a brioler pan. Broil 4-5 inches from heat about 20 minutes or until light brown.
  • Meanwhile, for glazy, in a small bowl stir together lime peel, lime juice, oil, garlic, thyme, pepper, and salt. Bruch chicken with glaze. Turn chicken, brush with more glaze. Broil for 5-15 minutes more or until chicken is no linger pink. (170 degrees for breasts and 180 for thighs) brushing often with glaze during the last 5 minutes of cooking time.

  • If you don't have a grill, you can also cook the chicken in a grill pan over medium-high heat. Just be sure to preheat the pan before adding the chicken.
