1 stick unsalted butter
1/2 cup milk
1/2 cup cream
1/4 cup grated fresh horseradish
Salt and pepper
Sour cream
Chives
4 tablespoons osetra caviar

  • Slice the potatoes in half vertically and carefully scrape the flesh into a medium bowl, reserving the best 4 skins. Add the butter, milk, cream and horseradish and mash until smooth, if the mixture is too dry add more milk. Season well with salt and pepper to taste. Fill each of the 4 skins with the mashed potato mixture. Place the filled potatoes on a baking sheet and return to the oven, bake until lightly golden brown, about 8 to 10 minutes. Remove from the oven and top with a dollop of sour cream, a tablespoon of caviar and sprinkle with chives.

Tips:

  • Select the right potatoes: Choose large, russet potatoes for their fluffy texture and ability to hold their shape well.
  • Prick the potatoes: Before baking the potatoes, use a fork to prick them all over. This helps the steam escape and prevents the potatoes from bursting.
  • Bake the potatoes until tender: Bake the potatoes for about an hour or until they are tender when pierced with a fork. The baking time may vary depending on the size of the potatoes.
  • Scoop out the potato flesh: Once the potatoes are cooked, let them cool slightly. Then, cut them in half lengthwise and scoop out the flesh, leaving a 1/4-inch border around the edges.
  • Mash the potato flesh: Place the scooped-out potato flesh in a large bowl and mash it until smooth. You can use a potato masher, a fork, or an electric mixer.
  • Add the fillings: To the mashed potato flesh, add the pepper jack cheese, horseradish, butter, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Stuff the potato skins: Spoon the mashed potato mixture back into the potato skins. Mound the filling slightly so that it forms a peak.
  • Bake the potatoes again: Place the stuffed potato skins on a baking sheet and bake them for about 15 minutes, or until the filling is heated through and the cheese is melted.
  • Garnish and serve: Remove the potatoes from the oven and garnish them with chopped chives or parsley. Serve immediately.

Conclusion:

Pepper Jack and Horseradish Double-Baked Potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. With their creamy, cheesy filling and crispy potato skins, these potatoes are sure to be a hit with everyone at the table.
