3/4 cup maple syrup
1/4 cup soy sauce
4 salmon fillets, skin removed
1/4 cup fresh ground black pepper
1/2 teaspoon olive oil

Steps:

  • In a bowl, mix maple syrup and soy sauce.
  • Cover the fish completely with the mixture and marinate in the refrigerator for as long possible-- at least four hours but a full day is best.
  • Preheat oven to 500 degrees F.
  • Rub oil on a 10 by 10-inch sheet of aluminum foil.

1/4 c soy sauce
4 6-oz salmon fillets, skin removed
1/4 c coarsely ground black pepper
1/2 tsp peanut oil or vegetable oil

Steps:

  • 1. In a zip lock bag or small deep bowl, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers the fish.
  • 2. Marinate in the fridge a minimum of 4 hours or up to 24 hours.
  • 3. Preheat oven to 500F.
  • 4. Rub oil on aluminum foil sheet.
  • 5. Place cracked pepper on a small plate. Remove salmon from marinade and pat top side only into cracked pepper to coat.
  • 6. Place fillets, pepper side up, on foil.
  • 7. Bake until salmon is done or grill directly over hot coals for a few minutes each side.
