Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 9

1 whole filet of beef tenderloin (4 to 5 pounds), trimmed and tied
6 tablespoons (3/4 stick) unsalted butter, melted
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise
1/3 cup sour cream
3 tablespoons Dijon mustard
1 1/2 tablespoons whole-grain mustard
1 tablespoon prepared horseradish
Bunch of parsley, for garnish

Steps:

  • Preheat the oven to 275 degrees F. Line a sheet pan with aluminum foil.
  • Pat the entire tenderloin dry with paper towels and brush it all over (top and bottom) with the butter. Sprinkle the tenderloin all over with 4 teaspoons salt and 2 teaspoons pepper. It will seem like a lot but trust me, it's important.
  • Place the tenderloin on the prepared sheet pan and roast it for 1 to 1 1/4 hours, until an instant-read thermometer inserted into the end of the filet registers 130 degrees F for medium rare. Remove from the oven, cover tightly with aluminum foil, and allow to rest at room temperature for 15 minutes. Discard the foil and allow to sit at room temperature.
  • Meanwhile, for the sauce, whisk together the mayonnaise, sour cream, mustards, horseradish, and 1/4 teaspoon salt in a small bowl. Refrigerate until ready to serve.
  • Remove the strings and slice the filet between 1/4 and 1/2 inch thick, sprinkle with salt, and place on a platter with a garnish of parsley. Serve warm, at room temperature, or cold with the sauce on the side.

Number Of Ingredients 10

One 3 1/2 pound beef tenderloin, trimmed
2 tablespoons olive oil
1 tablespoon Emeril's Original Essence
1/4 cup Dijon mustard
1/2 pound fresh horseradish, peeled and grated (about 1 1/2 cups)
1 1/2 teaspoons finely ground black pepper
2 tablespoons chopped garlic
1 tablespoon coarse salt
Emeril's Worcestershire Sauce
Port Wine Reduction

Steps:

  • Preheat the oven to 400 degrees F.
  • Rub the tenderloin with the oil and Emeril's Original Essence. Heat a saute pan large enough to hold the tenderloin over high heat until the pan is very hot, about 2 minutes. Sear the meat until evenly browned on all sides, about 2 minutes per side. Remove from the heat.
  • Line a shallow baking pan fitted with a wire rack with aluminum foil. Place the tenderloin on the rack. Rub the top and sides of the meat with the mustard.
  • Combine the horseradish, black pepper, garlic, and salt in a small mixing bowl. Using your hands, press the horseradish mixture over the mustard on the top and sides of the tenderloin. You may have to roll the tenderloin several times to make it all stick. Set it on the prepared rack.
  • Roast the tenderloin for about 30 minutes for rare (120 to 125 degrees F on an instant meat thermometer) and about 35 minutes for medium-rare (130 to 140 degrees F on an instant meat thermometer).
  • Remove from the oven and rest for 15 minutes before slicing.
  • Drizzle the beef with the Worcestershire sauce and Port Wine reduction.

Tips:

  • To ensure the best flavor and texture, choose a high-quality beef tenderloin that is at least 1 1/2 inches thick.
  • Pat the beef tenderloin dry before searing to help achieve a crispy crust.
  • Sear the beef tenderloin over high heat to create a flavorful crust, then reduce the heat to medium-low and continue cooking until the desired doneness is reached.
  • Let the beef tenderloin rest for at least 10 minutes before slicing to allow the juices to redistribute.
  • Serve the beef tenderloin with your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.

Conclusion:

Pepper crusted beef tenderloin with horseradish sauce is a classic dish that is sure to impress your guests. The tenderloin is seared to perfection and then coated in a flavorful pepper crust. The horseradish sauce adds a touch of spice and acidity that perfectly complements the beef. This dish is perfect for a special occasion or a romantic dinner.
