6 tablespoons olive oil
8 large garlic cloves, minced
2 tablespoons minced fresh rosemary
1 tablespoon dried thyme leaves
2 tablespoons coarsely ground black pepper
1 tablespoon salt

Steps:

  • Prepare beef: Trim off excess fat with a sharp knife. Fold thin tip end under to approximate the thickness of the rest of the roast. Tie with butcher's twine, then keep tying the roast with twine every 11/2 to 2 inches (to help the roast keep its shape). Snip silverskin with scissors to keep roast from bowing during cooking. Then, mix oil, garlic, rosemary, thyme, pepper and salt; rub over roast to coat. Set meat aside.
  • Either build a charcoal fire in half the grill or turn all gas burners on high for 10 minutes. Lubricate grate with an oil-soaked rag using tongs. Place beef on hot rack and close lid; grill until well-seared, about 5 minutes. Turn meat and close lid; grill until well-seared on second side, another 5 minutes.
  • Move meat to the charcoal grill's cool side, or turn off burner directly underneath the meat and turn remaining one or two burners (depending on grill style) to medium. Cook until a meat thermometer inserted in the thickest section registers 130 degrees for rosy pink, 45 to 60 minutes, depending on tenderloin size and grill. Let meat rest 15 minutes before carving.

1 small red bell pepper, cut into thin strips
1 small yellow bell pepper, cut into thin strips
1 small red onion, but into thin strips
1/4 cup stir-fry sauce
2 tablespoons rice wine or 2 tablespoons dry white wine
1/4 cup coarsely chopped fresh parsley
hot cooked white rice (optional) or Chinese egg noodles (optional)

Steps:

  • Combine soy sauce, garlic and pepper flakes in medium bowl.
  • Cut beef lengthwise in half, then crosswise into thin slices.

This is a nice sandwich where you can also use leftover meat. You can make it as spicy as you choose by varying the amount of the jalapenos. To reduce the heat of the jalapenos remove the membranes and seeds.

8 ounces beef round tip steaks, cut into 1/4-inch slices
2 teaspoons vegetable oil
1 small onion, cut into 1/4-inch wedges
1 medium jalapeno pepper, cut into rings
1 small garlic clove, crushed
1/8 teaspoon salt, if desired
2 kaiser rolls, split
1/4 cup tomatoes, chopped

Steps:

  • Heat oil in large nonstick skillet over medium-high heat.
  • Add onion, jalapeño pepper and garlic; stir-fry 3 to 4 minutes or until lightly browned.
  • Remove from skillet; reserve.
  • Add beef round tip steaks to same skillet; cook over medium-high heat 1 to 2 minutes, turning once.
  • Do not over cook.
  • Season with salt, if desired.
  • Place equal amounts of beef on roll bottoms; top with equal amounts of reserved onion mixture and tomato.

I've traveled to many different countries and am always on the lookout for cookbooks. I adapted this recipe from a Turkish cookbook and it brings rave reviews whenever I serve it. I usually serve the kabobs with rice pilaf and a tossed salad.

3 tablespoons lemon juice
2 tablespoons canola oil
1 large onion, finely chopped
1-1/2 teaspoons dried thyme

1 each medium sweet green, yellow, orange and red peppers

Steps:

  • In a large heavy-duty resealable plastic bag, combine the lemon juice, oil, onion, thyme, salt and pepper. Add meat; seal bag and turn to coat. Refrigerate for 6 hours or overnight. , Cut peppers into 1-in. squares and thread onto metal or soaked wooden skewers alternately with meat. , Grill over medium heat for 12-15 minutes or until the meat reaches desired doneness, turning often.

4 slices thick sourdough bread
1/3 lb thinly sliced roast beef (I use rare beef purchased at the deli.)
4 slices monterey jack with jalapeno pepper cheese, generous slices
1 teaspoon canned diced green chilis
mayonnaise
melted butter
salt

Steps:

  • Lay sliced bread on bread board.
  • Paint tops of bread slices generously with melted butter.
  • Flip bread slices over.
  • Spread mayonnaise generously on each slice of bread.
  • Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
  • Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
  • Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
  • Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
  • Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
  • Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
  • French fries, onion rings and cole slaw make wonderful additions to this meal.

BLACK PEPPER-CRUSTED ROAST BEEF WITH GRAVY



Black Pepper-Crusted Roast Beef with Gravy image

One 8- to 10-pound beef top round roast
Kosher salt
1/2 cup coarsely ground black pepper
3 heads garlic, ends removed, turned on their sides and sliced into two halves through the middle to expose each clove of garlic
Olive oil, for drizzling
1 cup hearty red wine
1/2 cup Dijon mustard
3 cups enriched beef stock
Juice from 1/2 lemon

Steps:

  • For the meat: Preheat the oven to 500 degrees F.
  • Sprinkle the roast beef generously on all sides with salt and coat with the pepper. Put the roast on a rack in a roasting pan. Arrange the garlic halves in a single layer of foil with some foil to spare. Drizzle with olive oil and sprinkle with salt. Wrap the foil over the garlic into a little package and place in the oven. Roast 45 minutes, then set aside.
  • Meanwhile, place the roasting pan in the center of the oven and cook, undisturbed, for 20 minutes. Lower the temperature to 350 degrees F, and continue to cook until a thermometer inserted in the center of the meat registers between 135 and 140 degrees F for medium-rare, about 2 hours Remove the roast beef and place it on a cutting board to rest for 20 minutes. (The roast temperature will continue to increase as it rests; the end slices will be more well done.)
  • For the gravy: Pour off excess grease from the roasting pan, then add the wine and bring to a boil over a burner. Reduce the liquid by half and whisk in the mustard. Add the stock and simmer until the sauce thickens slightly, 8 to 10 minutes. Add the lemon juice. Season to taste.
  • Squeeze 4 of the garlic halves like lemons over the blender to release the flesh from the skins, allowing the flesh to fall into the blender. Ladle some of the gravy into the blender and blend until smooth. Whisk the garlic back into the gravy. Squeeze the remaining garlic halves directly into the gravy and use the back of a spoon to smash them into the gravy. Taste for seasoning.
  • Serve the roast whole on the platter to carve at the table with the gravy on the side, or arrange slices of beef on a platter and coat with a layer of the gravy.

SUNNY'S BEEF AND BARLEY STEW WITH CRUSTY PEPPER BREAD



Sunny's Beef and Barley Stew with Crusty Pepper Bread image

1 tablespoon butter
1 tablespoon olive oil
2 pounds USDA choice beef chuck, cut into 1-inch cubes
Salt and freshly ground black pepper
1/2 cup baby-cut carrots, sliced into 1/4-inch discs
1 parsnip, peeled and chopped
1 stalk celery, trimmed and chopped
1/2 cup chopped onions
1/2 teaspoon dried thyme
1/2 teaspoon Hungarian paprika
2 cups dry red wine, such as shiraz
1 or 2 bay leaves
4 cups beef broth
1 cup pearled barley
Chopped parsley, for garnish
Crusty Pepper Bread, for serving
Half a French baguette, cut diagonally into 1-inch slices
6 to 8 tablespoons olive oil
Salt and coarsely ground black pepper

Steps:

  • Preheat the oven to 275 degrees F.
  • Trace and cut a piece of parchment paper to fit the size of the top of the Dutch oven to use as a lid. Set aside.
  • In a Dutch oven over medium-high heat, add the butter and olive oil. Season the beef cubes with salt and pepper and, when the pan is hot enough, add the beef. Be careful to cook the beef in batches if there isn't enough space. (Overcrowding will cause steaming, not searing.) Sear the cubes on each, and side then remove to a plate with a slotted spoon. In the fat left from the searing, add the carrots, parsnip, celery, onions, thyme, paprika, a pinch of salt and a grind or 2 of pepper. Saute until tender, about 8 minutes. Raise the heat and pour in the wine. Using a wooden spoon, scrape up any bits on the bottom of the pan. Raise the heat to a simmer, and then add the beef cubes back to the pot along with the bay leaves and beef broth. Cover with the prepared parchment paper and cook in the oven for 2 hours.
  • At the 2 hour mark, remove the parchment, taste, and season with salt, if needed. Add the barley, and stir in 1 cup of water if the stew looks too dry. Cook, covered with the actual lid for this step, until the barley is cooked through and tender, 40 to 45 minutes. Remove from the oven and garnish with chopped parsley. Serve with Crusty Pepper Bread.
  • Preheat the oven to 350 degrees F.
  • Brush both sides of the bread slices with olive oil and season with a pinch of salt and pepper on both sides. Place on a baking sheet and bake until the edges of the bread just begin to turn golden, about 10 minutes.
