Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 14

1 1/2 cups bulgur wheat
1 1/4 cups boiling water
4 tablespoons olive oil
3 tablespoons fresh lemon juice
2 tablespoons of fresh mint, chopped
3 tablespoons fresh cilantro, chopped
salt and pepper, to taste
1 roasted red pepper, peeled and sliced
1 bunch scallion, chopped (green onions)
2 garlic cloves, minced
1/2 cucumber, coarsely chopped
2 cups feta cheese, crumbled
oil-cured black olive, to serve (optional)
lime wedge, to serve

Steps:

  • Place the bulgar wheat in a large bowl, add the boiling water and leave to soak for 30 minutes, stirring occasionally with a fork, until the water has been absorbed.
  • In a mixing bowl, whisk together the oil, lemon juice and seasoning.
  • Pour oil mixture over the bulgar wheat, add the herbs and mix well.
  • Then mix in the remaining ingredients.
  • Cover and chill until required.
  • Stir in olives just before serving if desired.
  • Serve garnished with lime wedges.

Tips:

  • Choose ripe, firm cucumbers: Look for cucumbers that are deep green in color and have no blemishes. Avoid cucumbers that are yellow or have soft spots.
  • Peel the cucumbers if desired: Peeling the cucumbers is optional, but it will give the salad a more delicate flavor and texture.
  • Slice the cucumbers thinly: This will help the cucumbers absorb the dressing and flavors more easily.
  • Use a variety of peppers: Different types of peppers will give your salad different flavors and colors. For a mild salad, use green bell peppers. For a more spicy salad, use red or cayenne peppers.
  • Toast the peppercorns: Toasting the peppercorns will bring out their flavor and aroma. You can toast them in a dry skillet over medium heat for 2-3 minutes, or until they are fragrant.
  • Make the dressing ahead of time: The dressing can be made up to 24 hours ahead of time. This will allow the flavors to meld together.
  • Serve the salad chilled: This salad is best served chilled. You can chill it for at least 30 minutes before serving, or up to overnight.

Conclusion:

Pepper and cucumber salad is a refreshing, flavorful salad that is perfect for summer. It is easy to make and can be customized to your liking. With a variety of peppers and cucumbers to choose from, you can create a salad that is mild or spicy, sweet or sour. So next time you are looking for a light and healthy salad, give this pepper and cucumber salad a try.
