It's usually made in large quantities so there will be leftovers to toss with either pasta or rice the next day. It can be made either in the oven or on the stovetop. This is the stovetop version. This is even better the next day!

ONE-PAN CHICKEN WITH PEPERONATA AND OLIVES

One-Pan Chicken With Peperonata and Olives image

Peperonata is a classic Italian side of tangy stewed peppers that is often served with meat, stirred into pasta or draped over crostini. There are many regional varieties (the traditional Sardinian recipe uses only yellow peppers, while the Venetians add eggplant), but this combination of roasted peppers, tomatoes, olive oil and vinegar creates a vibrant, versatile sauce. Olives add a hint of brine, but capers would also do the trick. In this version, boneless, skinless chicken breasts roast directly on top for a no-fuss, one-dish meal. (You could also use chicken thighs, but you'd need to increase the cook time.) Serve this dish with any short pasta, rice or toasted country bread - and any leftovers tucked into a sandwich or tossed into salad.

PASTA PEPERONATA WITH TUNA AND OLIVES

Pasta Peperonata with Tuna and Olives image

Cherry tomatoes and a colorful combination of bell, sweet, and banana peppers are teamed with four pantry powerhouses to make a flavorful sauce for spaghetti: jarred tuna, golden raisins, Kalamata olives, and Parmesan cheese.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 50m

Number Of Ingredients 13

1/4 cup extra-virgin olive oil, plus more for drizzling
1 large onion, halved and thinly sliced
1 1/2 pounds mild peppers, such as bell, sweet, and banana, stemmed, seeded, and sliced into 1/4-inch pieces (4 cups)
Kosher salt
2 cloves garlic, minced (1 tablespoon)
1 pint cherry tomatoes, halved
2 tablespoons golden raisins, chopped
3/4 cup Kalamata olives, pitted and halved
1 basil sprig, plus 1/3 cup fresh leaves, sliced if large
12 ounces spaghetti
1 jar (6 to 7 ounces) tuna in oil, drained and flaked
2 1/2 ounces Parmigiano-Reggiano, grated (1 cup)
1 finger pepper or other hot pepper, thinly sliced into rounds; or 1 dried hot pepper, such as cayenne, crushed

Steps:

  • Heat a large straight-sided skillet or shallow pot over medium. Swirl in oil. Add onion, mild peppers, and 1 teaspoon salt. Cook, stirring occasionally, until vegetables have collapsed and are tender, 18 to 20 minutes. Add garlic, tomatoes, raisins, olives, and basil sprig. Cook, stirring occasionally, until tomatoes have collapsed and release their juices, and sauce thickens to a stew-like consistency, 6 to 8 minutes. Remove and discard basil.
  • Meanwhile, cook spaghetti in a large pot of generously salted boiling water until al dente, about 2 minutes less than package instructions. Reserve 1 cup pasta water, then drain. Transfer spaghetti and 1/2 cup pasta water to skillet with sauce and continue cooking, tossing a few times, until sauce thickens slightly and clings evenly to pasta, 3 to 4 minutes. Remove from heat. Add tuna, half of cheese, and finger pepper, tossing until evenly combined. Add more pasta water, a little at a time, until sauce evenly coats pasta again. Stir in basil leaves and serve, topped with remaining cheese and a drizzle of oil.

PEPERONATA

Peperonata image

Provided by Pete Wells

Categories     dips and spreads, appetizer

Time 1h

Yield Makes about 6 cups

Number Of Ingredients 9

8 gypsy peppers, or mixture of red, yellow and orange peppers, about 21/2 pounds total
1/2 cup extra-virgin olive oil, plus more for roasting
Kosher salt
2 tablespoons salt-packed capers, soaked
1 tablespoon tomato paste
1/2 red onion, diced (about 1 cup)
1/2 fennel bulb, cored and diced
1/2 teaspoon dried chili flakes
2 tablespoons red-wine vinegar

Steps:

  • Preheat the oven to 400 degrees. In a bowl, toss the peppers with a dash of olive oil and a pinch of salt, coating them evenly. Arrange in a single layer on a baking sheet. Roast, turning the peppers once about halfway through cooking, for 20 to 30 minutes, or until the skins have started to blister and pull away from the flesh. Remove from the oven, place in a bowl and cover tightly with plastic wrap until cool enough to handle. Remove the plastic wrap and peel the peppers. The skins should slide right off. Tear the peppers into roughly equal pieces, about ½ inch wide, discarding the stems, seeds and membranes.
  • In a large pot, heat the olive oil over medium heat. Dab the capers dry with a paper towel and add them to the oil. Fry the capers for about a minute, or until they bloom and become crispy. Stir in the tomato paste and cook for 2 minutes, until the paste turns brick red. Stir in the onion, fennel, chili flakes and ½ teaspoon salt and cook, stirring occasionally, for 5 minutes, or until the onion and fennel are tender.
  • Deglaze the pan with the vinegar, dislodging any browned bits, and stir in the peppers. Cook for a few minutes, taste for seasoning, and adjust with more salt or vinegar if needed. Can be served warm or stored in a tightly covered container for up to two weeks.

PEPERONATA

Peperonata image

Serve this colorful Italian condiment with lamb, as a topping for crostini, or on a sandwich with leftover roasted meat or chicken.

Provided by Martha Stewart

Yield Makes 1 cup

Number Of Ingredients 7

3 large bell peppers, preferably 1 each red, yellow, and orange
1 large Spanish onion, peeled
1 tablespoon olive oil
1 tablespoon unsalted butter
1 clove garlic, thinly sliced
Pinch of sugar
Salt and freshly ground black pepper

Steps:

  • Stem, seed and remove ribs from peppers. Cut lengthwise into 1-inch-wide strips; leave curved ends intact. Cut onion in half lengthwise, and slice into 1/4-inch-thick semicircles
  • Heat oil and butter in a large skillet over medium heat. Add garlic and onions, and cook for about 2 minutes. Add pepper strips and sugar, and toss for 2 to 3 minutes. Cover pan, and turn heat to low. Cook, stirring occasionally, until peppers are very soft, 30 to 35 minutes.
  • Remove cover; raise heat to medium. Cook stirring often, until most of the liquid evaporates and peppers are nicely glazed, about 3 minutes. Add a little water, if necessary, to avoid scorching. Season with salt and pepper. Serve peperonata warm or at room temperature.

Tips:

  • Choose ripe and flavorful vegetables: Use the freshest and ripest bell peppers, onions, and tomatoes you can find. This will ensure the best flavor in your peperonata.
  • Don't overcrowd the pan: Make sure to cook the vegetables in batches if necessary to avoid overcrowding the pan. This will help them cook evenly and prevent them from steaming instead of roasting.
  • Season well: Don't be afraid to season your peperonata generously with salt, pepper, and herbs. This will help to bring out the natural flavors of the vegetables.
  • Cook low and slow: Peperonata is a dish that benefits from low and slow cooking. This allows the flavors to develop and deepen over time.
  • Serve warm or at room temperature: Peperonata can be served warm or at room temperature. It is a versatile dish that can be enjoyed as an appetizer, side dish, or main course.

Conclusion:

Peperonata is a delicious and versatile dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences.
