PENNSYLVANIA DUTCH RICE PUDDING

So easy, so creamy and so good. From my well worn copy of Best-Loved Pennsylvania Dutch Recipes. My DH and I ate at a restaurant yesterday where I had one bite of their terrible rice pudding - what a shame! There is no excuse for that since a good rice pudding is easy to make as long as you check on it every 15 minutes. The first time I made this I thought there was a typo since it looks like so little rice and so much milk, but the rice fluffs big time!

CREAMIEST RICE PUDDING

Creamiest Rice Pudding image

OK, so it's a little time-consuming to make this on the stovetop, but for a real rice pudding fan, it's worth every minute. My husband says it reminds him of the rice pudding he used to get as a child at a restaurant.

½ gallon milk

3 eggs, lightly beaten
¼ cup milk
¼ teaspoon salt
2 teaspoons vanilla extract
ground cinnamon to taste

Tips:

  • Use high-quality short-grain rice for the best texture.
  • Rinse the rice thoroughly before cooking to remove any starch and impurities.
  • Use whole milk for a richer flavor and creamier texture.
  • Add a pinch of salt to the rice pudding to balance the sweetness.
  • Be patient when cooking the rice pudding. It takes time for the rice to absorb the liquid and become tender.
  • Stir the rice pudding frequently to prevent it from sticking to the bottom of the pot.
  • Add the raisins and nuts during the last few minutes of cooking so that they don't overcook.
  • Serve the rice pudding warm or cold, depending on your preference.
