One-Pot Penne with Zucchini and Parmesan image

This simple summer pasta dish is the perfect way to dispatch that bumper crop of zucchini.

2 medium zucchini
Coarse salt and freshly ground pepper
8 ounces penne pasta
3 tablespoons extra-virgin olive oil
1/3 cup grated Parmesan
1/2 teaspoon minced garlic
1/4 teaspoon red-pepper flakes

Steps:

  • Shred zucchini on the large holes of a box grater. (You should have about 4 cups.) Toss with 1/2 teaspoon salt in a colander set over a bowl. Let stand 10 minutes.
  • Meanwhile, cook pasta in a pot of generously salted boiling water until al dente. Drain pasta directly over zucchini in colander set in sink. Transfer both to pot; toss with olive oil, Parmesan, garlic, and red-pepper flakes. Season with coarse salt and freshly ground pepper. Serve, dressed with more oil and cheese.

1/2 pound penne, cooked and drained

Steps:

  • In a large skillet set over moderate heat cook the onion in the olive oil, stirring occasionally, for 3 minutes, or until softened. Add the Pancetta and cook the mixture, stirring, for 2 minutes. Add the zucchini and salt and pepper to taste and cook the mixture, stirring occasionally, for 3 minutes more. Add the cherry tomatoes and cook, stirring, 2 minutes, or just until heated through. In a large bowl combine the pasta with the pancetta mixture, the goat cheese and the basil. Transfer to a serving plate and garnish with a sprig of fresh basil.;

1 large onion, diced
5 slices pancetta, diced
3 large zucchini, cubed
½ cube chicken bouillon
½ cup water
1 cup heavy cream
1 (8 ounce) package penne pasta
2 tablespoons grated Parmesan cheese

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and pancetta; cook until onion is soft and pancetta crisp, about 5 minutes. Add zucchini and bouillon cube. Cook and stir for 2 to 4 minutes. Pour in water and cover skillet. Cook until zucchini is soft and liquid has been absorbed, about 7 minutes. Lastly add the cream and mix well, remove from heat.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and add to the skillet. Mix well. Serve with Parmesan cheese.

Steps:

  • COOK pasta according to package directions.
  • MEANWHILE, season zucchini with a little sea salt.

2 tablespoons olive oil
½ cup chopped onion
2 cloves garlic, chopped
1 pound lean ground turkey

1 bunch kale, chopped into 1 1/2-inch pieces
2 small zucchini, thinly sliced
1 (540 mL) can seasoned diced tomatoes with juices (such as Aylmer® Accents® Garlic and Olive Oil Petite Cut Tomatoes)
1 cup prepared pasta sauce
2 teaspoons Italian seasoning
2 ½ cups shredded mozzarella cheese, divided
½ cup shredded Cheddar cheese
⅓ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a large baking dish.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.

1/2 lb penne
6 tablespoons olive oil, plus more as needed
2 ears corn, kernels cut off cob
fresh ground black pepper, to taste
8 zucchini, about 2 lb. total, cut into half-moons
1/2 yellow onion, diced
4 tomatoes, cored, seeded, cut into 1-inch chunks
1 tablespoon garlic, sliced
1 teaspoon fresh oregano, chopped
1/4 teaspoon red pepper flakes
1 tablespoon tomato paste
1/4 cup white wine
1/2 cup fresh basil, thinly sliced
6 ounces mozzarella cheese, grated
2 ounces parmigiano-reggiano cheese, grated

Steps:

  • Preheat an oven to 400ºF.
  • Bring a large pot of water to a boil over high heat. Generously salt the water, add the pasta and cook, stirring occasionally, until al dente, about 8 minutes. Drain the pasta and rinse under cold running water. Set aside.
  • In a 12-inch nonstick fry pan over medium-high heat, warm 3 Tbs. of the olive oil. Add the corn, season with salt and black pepper and cook, stirring occasionally, until the corn is lightly golden, 6 to 8 minutes. Transfer to a large bowl. Set aside.
  • Return the pan to medium-high heat and warm the remaining 3 Tbs. olive oil. Working in batches, add the zucchini, season with salt and cook, stirring occasionally, until the zucchini is tender and golden brown, 6 to 8 minutes. Add to the bowl with the corn. Repeat with the remaining zucchini, adding more oil to the pan as needed.
  • Set the pan over medium-low heat. Add the onion, 1 teaspoons salt and black pepper, to taste. Cook, stirring occasionally, until the onion is translucent, about 2 minutes. Stir in the tomatoes, garlic, oregano and red pepper flakes and cook, stirring occasionally, until the tomatoes soften and begin to form a sauce, about 5 minutes. Stir in the tomato paste and cook for 1 minute. Add the wine and cook until the wine has reduced and the sauce is fairly thick, about 3 minutes more.
  • Add the pasta, tomato sauce, basil, mozzarella and half of the Parmigiano-Reggiano to the bowl with the vegetables and stir to combine. Transfer to the fry pan and sprinkle the remaining Parmigiano-Reggiano on top. Transfer the pan to the oven and bake until golden brown on top, 20 to 25 minutes. Serve warm.

1 pound penne or ziti pasta
3 tablespoons extra-virgin olive oil
3/4 cup crumbled ricotta salata (salted dry ricotta cheese; about 3 ounces)*
Ricotta salata is a firm cheese with a mildly salty flavor. It's available at some supermarkets and specialty foods stores, and at Italian markets.

Steps:

  • Prepare barbecue (medium-high heat). Arrange zucchini on rimmed baking sheet; brush all over with oil. Sprinkle with coarse salt and black pepper. Grill zucchini until tender, about 4 minutes per side. Transfer to work surface; cut crosswise into 1-inch pieces. Place in large serving bowl. Add vinegar, mint, and crushed red pepper; set aside.
  • Cook pasta in boiling salted water until just tender but still firm to bite. Drain. Add pasta to zucchini mixture, then add 3 tablespoons olive oil and ricotta salata and toss. Season to taste with salt and pepper.

1 pound lean ground beef
1 pound bulk Italian sausage
2 zucchini, diced
2 yellow squash, diced
2 (24 ounce) jars pasta sauce, divided
1 (4 ounce) can whole black olives
1 (4 ounce) can sliced black olives
2 cups shredded Cheddar cheese
2 cups shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.

1 1/2 pounds zucchini and yellow squash
4 large roasted red peppers, packed in water
2 large cloves garlic
2 tablespoons capers
2 teaspoons anchovy paste
1/4 to 1/2 teaspoon hot-pepper flakes
8 ounces penne
1 teaspoon olive oil
A few sprigs basil, to yield 1/4 cup chopped
Freshly ground black pepper to taste

Steps:

  • Bring water to boil in a covered pot for penne.
  • Turn on broiler, and line the broiler pan with a double thickness of aluminum foil. Scrub and trim the zucchini and yellow squash, and slice in half lengthwise. Arrange on the foil-lined broiler pan, cut side up, and spray with nonstick pan spray. Broil the squashes about 3 inches from the source of heat for about 15 minutes, until they are browned and softened.
  • Meanwhile, rinse the peppers and cut in fine julienne strips. Chop the garlic, rinse the capers and combine the garlic, capers, anchovy paste and hot pepper flakes.
  • Cook the penne according to package directions.
  • Heat a small nonstick skillet until it is hot. Reduce heat to medium high, and add the oil. Quickly saute the garlic mixture. Remove from heat, and stir in the julienned peppers.
  • Cut the squashes into thin strips, and add to the pepper mixture.
  • Wash, dry and cut the basil, and stir into pepper mixture. Season with pepper.
  • Drain the penne, and top with the sauce.

1 onion, quartered
1 carrot, peeled and cut into 1-inch pieces
3 bay leaves
1 clove garlic, peeled and smashed
1 piece (1 inch long) fresh ginger, sliced
Zest of 1 orange
1 tablespoon whole black peppercorns
2 live lobsters (1 1/4 pounds each)
Salt
8 ounces penne, or garganelli
1 Vidalia or other sweet onion
4 small zucchini (about 1 pound)
2 tablespoons minced garlic
4 ears corn, shaved from the cob
2 arugula, stems trimmed, chopped
2 tablespoons fresh marjoram leaves
1 ounce freshly grated Parmesan cheese (optional)
Olive-oil cooking spray

Steps:

  • Fill sink with ice water. In a stockpot, combine onion, carrot, bay leaves, garlic, ginger, zest, and peppercorns with 8 cups water; cover and bring to a boil. Add lobsters, cover, and cook 8 minutes once water has returned to a boil. Remove lobsters, reserving the liquid; transfer to the ice bath.
  • When lobsters are cool enough to handle, break tails and claws from body; crack open to remove meat. Set meat aside. Add bodies and empty shells to reserved liquid; return to a boil. Reduce heat; simmer 30 minutes. Drain through a fine sieve; discard solids. Return liquid to pot; cook over medium-high heat until reduced to 1 cup, about 45 minutes. Cut meat from lobster-tail and claw into bite-size pieces; set aside.
  • Bring a 5-quart saucepan of salted water to a boil, and cook pasta until al dente, about 7 minutes. Drain in a colander, and set aside.
  • Cut onion into 1/8-inch wedges; remove the core. Cut zucchini lengthwise into quarters and crosswise into 1/2-inch pieces. Heat a low-sided 6-quart saucepan coated with olive-oil cooking spray over medium-high heat until very hot. Add onion and garlic; reduce heat to medium low. Cook until onions are translucent, about 3 minutes. Add zucchini; cook until tender, about 7 minutes. Add corn, reserved lobster meat, cooked pasta, reserved liquid, arugula, and marjoram; stir to combine. Stir in Parmesan, if desired; serve.

  • Preheat oven to 375. Grease a 2 1/2 to 3 quart deep casserole. Cut each zucchini half in thirds lengthwise, then crosswise into 1 1/2 inch long pieces. Heat oil in large heavy skillet over medium heat. Add sausage and cook until no longer pink, breaking up with a fork. Transfer to bowl using slotted spoon. Add onion and red pepper to skillet and cook until beginning to soften, stirring occasionally, about 5 minutes. Add zucchini. Season with salt and pepper and saute until almost tender about 8 minutes. Return sausage to skillet. Add cream and oregano and bring to a boil. Add half of fontina cheese and stie until just melted. Meanwhile, cook penne in a large pot of boiling salted water, stir occasionally, until just tender but still firm to the bite. Drain well; return to pot. Add your sauce mixture and stir to coat. Taste and adjust seasoning to your taste. Transfer to prepared caserole. Top with remaining cheese. (Can be prepared through here up to one day ahead. Cover and refrigerate. Bring to room temp before continuing.) Bake until heated thrugh, about 15 minutes. Serve hot. Can be doubled.

1 1/2 tablespoons fresh lemon juice
1/4 teaspoon black pepper
2/3 cup crumbled basil and tomatoes feta cheese or 2/3 cup plain feta (about 2 1/2 ounces)

Steps:

  • Cook the pasta according to the package directions, omitting salt or fat.

1/2 c red onions, chopped
1/2 c red peppers, chopped

1/4 c dry red wine
1 can(s) (14.5 oz.) diced tomatoes
1 can(s) (13.5 oz.) tomato sauce (substitute with marinara sauce)
1 tsp dried oregano leaves
1 tsp italian seasoning
1 tsp smoked paprika
1 tsp dried basil leaves
1 tsp dried rosemary, chopped
1 tsp garlic salt, or more to taste (optional)
2 Tbsp brown sugar, such as demerara
1 medium zucchini, cut into 1/4-inch slices
freshly ground black pepper, to taste (i always use mixed peppercorns)
1/4 tsp red pepper flakes, or to taste
1/4 c monterey jack jalapeño cheese, grated
2 Tbsp fresh parsley, chopped

Steps:

  • 1. Cook pasta according to package directions.
  • 2. In a large skillet over medium, heat oil. Add onion and sauté for 3 minutes. Add red pepper and cook for another 3 minutes. Add garlic and sauté for 1 minute. Add pork and cook until no longer pink. Add red wine and cook it down until liquid has almost evaporated.
