Time 40m

Yield Makes 4 (main course) servings

Number Of Ingredients 10

2 tablespoons olive oil
3 yellow, red, or orange bell peppers, cut lengthwise into 1/4-inch-thick strips
1 large onion, cut lengthwise into 1/4-inch-thick slices
2 garlic cloves, minced
3 anchovy fillets, rinsed and chopped

1/4 cup chopped fresh basil
Accompaniment: grated parmesan

Tips for Making the Best Penne with Yellow Peppers and Capers

  • Choose the Right Pasta: Use a short pasta shape like penne or rigatoni to hold the sauce well.
  • Cook the Pasta Properly: Cook the pasta al dente according to the package instructions. This means cooking it until it is tender but still has a slight bite to it.
  • Use Fresh Vegetables: Fresh yellow peppers and capers will give your dish the best flavor. If you can't find fresh yellow peppers, you can use red or orange peppers instead.
  • Sauté the Vegetables Properly: Sauté the vegetables over medium-high heat until they are tender but still have a little bit of crunch. Don't overcook them, or they will become mushy.
  • Use a Good Quality Olive Oil: Extra virgin olive oil is the best choice for this dish. It will give your pasta a delicious, rich flavor.
  • Season the Dish Generously: Don't be afraid to season your pasta with salt and pepper. This will help to bring out the flavors of the vegetables and the sauce.

Conclusion

This penne with yellow peppers and capers is a quick and easy weeknight meal that is packed with flavor. The combination of sweet peppers, tangy capers, and creamy Parmesan cheese is sure to please everyone at the table. Serve it with a side salad and a glass of white wine for a complete meal.
