1 medium onion, diced
2 slices bacon, diced
1 1/4 cups diced cooked turkey or 1 1/4 cups cooked chicken
2/3 cup reduced-sodium turkey broth or 2/3 cup reduced-sodium chicken broth
2 ounces camembert cheese, cut in small bits
2 tablespoons whipping cream
2 tablespoons minced fresh basil
1/4 teaspoon salt
fresh ground black pepper

Steps:

  • Cook penne according to package directions; drain and set aside.
  • Meanwhile, cook onion and bacon in a medium-sized saucepan over medium-high heat, stirring often, until bacon is browned, about 4 minutes.

Steps:

  • Bring a pot of salted water to a boil. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the leeks, garlic and turkey and cook, stirring, until the turkey browns slightly, about 5 minutes. Add the tomatoes, 2 cups water and 1/4 teaspoon each salt and pepper. Remove the parmesan rind and season with salt and pepper.
  • Divide the pasta among bowls. Top with the remaining 1 tablespoon cheese and more basil.

1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
1 medium ripe tomato, chopped, or more to taste
1 (8 ounce) package fresh spinach
salt and ground black pepper to taste
6 strips turkey bacon
¼ cup crumbled Gorgonzola cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
