Provided by Giada De Laurentiis

Time 40m

Yield 6 servings

Number Of Ingredients 9

6 ounces pancetta, diced
2 tablespoons olive oil
1 onion, chopped
Sea salt
2 garlic cloves, coarsely chopped
Pinch dried crushed red pepper flakes
1 (28-ounce) can tomato puree
1 pound linguine
1/2 cup grated Pecorino Romano

Steps:

  • Add the pancetta to a heavy large skillet over medium heat. Add olive oil and saute until golden brown, about 8 minutes. Add the onion and saute until tender, about 5 minutes. Season with salt. Add the garlic and red pepper flakes. Saute until fragrant, about 30 seconds. Stir in the tomato puree. Simmer uncovered over medium-low heat until the sauce thickens slightly and the flavors blend, about 15 minutes. Season the sauce with salt, to taste.
  • Meanwhile, boil the linguine in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Toss the linguine with the sauce in the skillet, adding some of the reserved cooking liquid until the pasta is moist but being careful not to dilute the sauce. Toss with the cheese. Season with salt, to taste.

RED PEPPER PENNE WITH CHERRY TOMATO PUTTANESCA

Red Pepper Penne with Cherry Tomato Puttanesca image

Puttanesca sauce, or "streetwalkers' sauce," is a favorite in our house, but the women that made this sauce famous (or infamous) probably didn't have to walk too many streets to lure in their customers. They simply put the ingredients for this sauce in clay pots and let the sauce bake in the windows of their houses all day before tossing the tomato and anchovies with pasta. No one knows if the men came in for the ladies or the sauce--my bet is they had hopes of getting truly lucky and enjoying both. Regardless of its history, you do feel naughty when you eat this spicy, salty, wildly delicious concoction.

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

1/4 cup olive oil
8 to 12 good-quality anchovy fillets
6 large cloves garlic, thinly sliced or chopped
2 small fresh red finger chiles, finely chopped
1/2 cup dry vermouth
2 pints cherry tomatoes
1/2 cup oil-cured pitted black olives
1/4 cup capers
A few fresh basil leaves, torn
Chicken stock, as needed
1 pound bucatini or red pepper penne
1 cup loosely packed fresh flat-leaf parsley tops, finely chopped
1/4 cup grated Parmesan

Steps:

  • In a large skillet, heat the oil (4 turns of the pan) over medium heat. Add the anchovies, cover the pan with a splatter screen or lid, and shake until the anchovies begin to break up. Reduce the heat a bit, uncover, and stir until the anchovies melt into the oil. Add the garlic and chiles and stir for 2 minutes. Add the vermouth.
  • Add the cherry tomatoes to the skillet, then add the olives and capers. Add the basil and simmer over medium-low heat for 20 minutes to break down the tomatoes. Add chicken stock if liquid gets too low.
  • To serve, cook 1 pound pasta to al dente. Drain, reserving 1 cup of the cooking water. Toss together the sauce, starchy water, parsley, Parmesan and pasta.

PASTA ALLA VODKA

Pasta Alla Vodka image

There's no need to order takeout from your neighborhood restaurant when this beloved, easy-to-assemble Italian-American classic gets dinner on the table in no time. Adding pancetta brings a salty smokiness, but if you leave it out, you're still in for a quick and flavorful dish. If you're feeling ambitious, the pasta is delightful with Caesar salad or garlic bread, but it's also satisfying enough to take centerstage. Put on some Puccini, open up a bottle of red and you're guaranteed a more relaxed dining experience than the one you might get at the local red-and-white checkered-tablecloth joint.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
1 pound rigatoni or penne pasta
2 tablespoons olive oil
4 ounces diced pancetta, optional
1 medium yellow onion, finely chopped
2 garlic cloves, finely chopped
1/2 teaspoon red-pepper flakes
3/4 cup vodka
1 (28-ounce) can crushed tomatoes
Freshly ground black pepper
3/4 cup heavy cream
1/4 cup grated Grana Padano or Parmesan cheese, plus more for serving
1 tablespoon roughly chopped fresh oregano
2 tablespoons roughly chopped Italian parsley

Steps:

  • Bring a large pot of salted water to a boil (2 heaping tablespoons kosher salt to about 7 quarts water). Add the pasta and cook according to package instructions until al dente.
  • Meanwhile, prepare the sauce: Heat the oil in a deep 12-inch skillet or pot over medium. Add the pancetta, if using, and fry until crispy, stirring occasionally, 3 to 5 minutes. Add the onion, garlic and red-pepper flakes and cook, stirring occasionally, until onion is translucent, about 3 minutes. Turn the heat to medium-low, add the vodka and cook until reduced by half, 2 to 3 minutes.
  • Stir in the tomatoes and then fill the can halfway with water and swish it around to loosen up any leftover tomatoes; add a quarter to half of the water to the pan. Simmer until the sauce begins to thicken, about 10 minutes, and season with salt and pepper. If you prefer your sauce a little looser, go ahead and add the remaining water and simmer 2 to 3 minutes more. Reduce heat to low, add the cream and cook, stirring, until the sauce becomes an even pinkish-rust color, about 1 minute.
  • Stir in the cooked pasta and 1/4 cup cheese; toss to coat. Season to taste with salt and pepper. Divide among bowls, top with additional cheese, if desired, and sprinkle with the oregano and parsley.

Penne with Pancetta and Tomato-Cream Sauce image

Categories     Milk/Cream     Pasta     Pork     Tomato     Sauté     Super Bowl     Quick & Easy     Basil     Bacon     White Wine     Winter     Potluck     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 8

1/2 cup chopped pancetta or bacon (3 ounces)
1 tablespoon olive oil
2 garlic cloves, finely chopped
2 14 1/2-ounce cans petite diced tomatoes in juice
1/2 cup dry white wine
1/2 cup whipping cream
3/4 cup torn basil leaves, divided
1 pound penne

Steps:

  • Cook pancetta in large skillet over medium-low heat until crisp, about 8 minutes. Using slotted spoon, transfer pancetta to paper towels to drain. Add olive oil and garlic to pancetta drippings and sauté 30 seconds. Add tomatoes with juices, wine, and cream. Bring sauce to boil; reduce heat to medium and simmer until sauce is slightly reduced, about 10 minutes. Stir in 1/2 cup basil. Season sauce to taste with salt and pepper.
  • Meanwhile, cook pasta in pot of boiling salted water until tender but still firm to bite. Drain pasta and divide among 4 plates. Spoon sauce over pasta. Sprinkle pasta with pancetta and remaining 1/4 cup basil and serve.

Tips:

  • Use high-quality ingredients: Fresh, ripe tomatoes, flavorful pancetta, and a good quality olive oil will make all the difference in this dish.
  • Don't overcrowd the pan: When cooking the pancetta and vegetables, make sure to give them enough space so that they can brown properly.
  • Cook the pasta al dente: This means that the pasta should be cooked until it is tender but still has a slight bite to it.
  • Add the pasta to the sauce: Once the pasta is cooked, add it to the sauce and toss to coat. This will help the pasta absorb all of the delicious flavors of the sauce.
  • Garnish with fresh herbs: Before serving, garnish the dish with fresh basil or parsley. This will add a pop of color and flavor to the dish.

Conclusion:

This penne with tomatoes, pancetta, and red pepper is a quick and easy weeknight meal that is sure to please the whole family. It is packed with flavor and is a great way to use up fresh tomatoes from the garden. So next time you are looking for a simple but delicious pasta dish, give this recipe a try.
