Time 40m

Yield 8

Number Of Ingredients 12

1 medium head cauliflower, cut into bite-sized florets
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup butter
¼ cup all-purpose flour
1 (16 ounce) package penne pasta
4 cups hot skim milk
1 cup grated Romano cheese
½ teaspoon ground nutmeg
½ teaspoon salt
2 medium tomatoes, seeded and diced
freshly cracked black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss cauliflower with olive oil. Transfer to a baking sheet.
  • Roast in the preheated oven for 15 minutes. Sprinkle garlic over cauliflower and toss to combine. Continue to cook until cauliflower is tender and beginning to brown, about 5 minutes longer. Remove from the oven.
  • While the cauliflower is roasting, melt butter in a skillet over medium-low heat, and bring a large pot of lightly salted water to a boil.
  • Add flour to the melted butter and stir until smooth. Increase heat to medium and cook, stirring often, until mixture turns a light, golden color, about 5 minutes.
  • At the same time, cook penne in the boiling water, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve about 1/4 cup pasta water.
  • Add hot milk, 1 cup at a time, to the butter mixture, whisking continuously until very smooth. Bring to a boil. Cook, stirring constantly, for 10 minutes. Stir in Romano cheese and remove from the heat. Season with nutmeg and salt and set aside until ready to use.
  • Combine penne, roasted cauliflower, bechamel sauce, and tomatoes in a large bowl. If the sauce is too thick, stir in a little of the reserved pasta water. Serve immediately with black pepper.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is firm and heavy, with tightly packed florets. Avoid heads with any signs of bruising or discoloration.
  • Roast the cauliflower at a high temperature: This will help to caramelize the florets and give them a slightly smoky flavor. Aim for a temperature of 425 degrees Fahrenheit (220 degrees Celsius).
  • Use a good quality olive oil: This will help to enhance the flavor of the cauliflower and the other ingredients in the dish.
  • Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Al dente pasta is the best choice for this dish.
  • Add the cauliflower to the pasta towards the end of cooking: This will help to prevent the cauliflower from becoming mushy.
  • Garnish with fresh herbs: Fresh herbs, such as parsley, basil, or oregano, will add a pop of color and flavor to the dish.

Conclusion:

Penne with roasted cauliflower is a simple but flavorful dish that is perfect for a weeknight meal. It is also a great way to get your kids to eat their vegetables. The roasted cauliflower is slightly smoky and caramelized, and it pairs perfectly with the al dente pasta and creamy sauce. This dish is sure to be a hit with the whole family.
