1 pound fresh asparagus, cut into 1-inch pieces
1 large onion, chopped
1/4 cup butter

Steps:

  • Cook pasta according to package directions. 1/2 cup frozen green peas
1 can (10 oz each) Ro*TelĀ® Mild Diced Tomatoes & Green Chilies, undrained
1 pkg (8 oz each) 1/3 less fat cream cheese (Neufchatel), cubed
1/2 cup shredded sharp Cheddar cheese
3/4 cup chopped fully cooked lean ham

  • 1. Cook pasta according to package directions, omitting salt; add peas last 2 minutes of cook time. Drain; set aside and keep warm.

3 cups broccoli florets, roughly chopped (about 1 medium broccoli crown)
3 tablespoons unsalted butter
1 1/2 to 2 cups diced ham (about 8 ounces)
1 large clove garlic, finely minced
2 to 3 teaspoons chopped fresh basil, or 1/2 teaspoon dried leaf basil
3/4 cup heavy cream
3/4 cup freshly grated Parmigiano-Reggiano cheese
Salt, to taste, optional
Freshly ground black pepper, to taste, optional

Steps:

  • Cook the pasta in a pot of boiling salted water following the package directions. Drain in a colander.
  • Meanwhile, put the broccoli pieces in a steaming basket. Bring about an inch of water to a boil in a medium to large saucepan. Put the steaming basket in the pan (above the water, so the broccoli doesn't sit in the water). Cover the pan and steam the broccoli for about 4 minutes, or until the florets are just barely tender.
  • In a skillet or saute pan over medium heat, melt the butter. Add the ham and cook, stirring, until browned. Add the garlic and cook for 1 more minute. Add the basil, cream, and Parmesan cheese. Bring to a simmer over low heat and continue cooking for about 1 minute.
  • Taste and add salt and pepper, as needed. Combine with the drained pasta and toss. Heat through.
  • Transfer the pasta mixture to a serving bowl and toss again at the table just before serving.

1 pound fresh peas, shelled (about 3/4 cup)
6 ounces pea shoots (tendrils, shoots, leaves) (1/2 big bunch), curly tendrils removed and discarded
1 tablespoon extra virgin olive oil
1 bunch young spring onions or scallions, cleaned and finely chopped (about 1/2 cup)
Salt and freshly ground pepper
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh parsley
3/4 pound penne
1 to 2 ounces Parmesan, grated (1/4 to 1/2 cup, to taste)

Steps:

  • Begin heating a large pot of water for the pasta. Meanwhile, steam the peas over an inch of boiling water for 4 minutes, until just tender. Transfer to a bowl. Add the pea shoots to the steamer and steam 2 minutes, until just wilted. Remove from the heat and allow to cool until you can handle them. Do not discard the steaming water; pour it into a measuring cup. Squeeze out excess water from the pea greens and chop medium-fine. You should have about 1 cup chopped leaves and tender stems.
  • Heat the olive oil over medium heat in a large skillet and add the chopped spring onion or scallions. Cook, stirring, until wilted, about 3 minutes. Add the pea shoots and stir together for about a minute. Season to taste with salt and pepper. Add the peas, tarragon and parsley and about 1/4 cup of the steaming water and heat through.
  • When the water in the pot comes to a boil, salt generously and add the pasta. Cook al dente, using the timing instructions on the package as a guide but checking the pasta a minute before the time indicated is up. When the pasta is ready, using a ladle transfer 1/2 cup of the pasta cooking water to the pan with the peas and pea shoots. Drain the pasta and toss at once with the vegetables and Parmesan. Serve hot.

1 cup peas, frozen or fresh

1 tablespoon butter, softened

I tried to copy a wonderful dish I had at a small local Italian restaurant and this one turned out WONDERFUL (for a lot less money too!) The flavors are excellent and it's a totally new way to use up leftover ham. The crispy ham reminds me of pancetta. This is a very forgiving recipe and many different vegetables can be added to your liking, try sauteed zucchini with the peas, or mushrooms, broccoli, etc.

4 cups penne pasta, uncooked
1 cup peas, frozen petite
1 1/2 cups ham, chopped small
2 cups milk
4 tablespoons flour
1 tablespoon butter
1 tablespoon extra virgin olive oil
5 -6 garlic cloves, chopped (or more!)
8 ounces cream cheese, lite is wonderful in this
1/2 cup parmesan cheese
1 -2 teaspoon salt (to taste)
fresh pepper (to taste)

Steps:

  • Bring large pot of water to boil and add pasta, cooking to al dente.
  • Add peas last 2-3 minutes to pasta.
  • Scoop out 1 cup pasta water, then drain, and place in a large serving dish.
  • Whisk flour into milk (or shake together in a jar) till mixed well.
  • In skillet, pour olive oil in and add ham, cook over medium heat, stirring occasionally until ham is crispy. Remove to paper towel to drain.
  • In sauce pan, melt butter (or use more olive oil) and saute garlic over medium low for about 2-3 minutes (if you love garlic, feel free to add more!).
  • Whisk in milk/flour mixture and add chipped cream cheese, whisking till melted into sauce smoothly. Add Parmesan cheese and whisk till incorporated.
  • In large dish with pasta and peas, toss in crispy ham, and any other vegetables you want (optional).
  • Pour sauce over pasta and mix, pouring in pasta water till nice and creamy.
