Provided by Katie Lee Biegel

Categories     side-dish

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 16

1 pound rainbow carrots, cut on a bias into 1-inch chunks
1 pound multicolored mini creamer potatoes, larger ones halved
1 pound Brussels sprouts, halved
1/4 cup extra-virgin olive oil, plus more for drizzling
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon coriander seeds
8 ounces feta
3 tablespoons Greek yogurt
1 tablespoon honey
Zest and juice of 1 lemon
1/4 cup fresh mint leaves, chopped
1/4 cup fresh parsley leaves, chopped
2 tablespoons fresh chives, chopped
1/2 cup pomegranate seeds
1/4 cup pistachios, toasted and chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Combine the carrots, potatoes and Brussels sprouts in a large bowl. Drizzle with 1/4 cup olive oil and sprinkle with the salt, pepper and coriander. Spread the vegetables on the prepared baking sheet and roast for 15 to 20 minutes. Flip the vegetables and continue to roast until tender and browned all over, 15 to 20 minutes more.
  • Meanwhile, add the feta, yogurt, honey, lemon zest and lemon juice to a food processor and pulse until smooth and creamy, adding a little water if needed to loosen the puree. Add the herbs and pulse until just distributed (you don't want to turn the mixture green; you just want to combine them). Spread the feta mixture on a platter. Arrange the roasted vegetables on top of the feta. Sprinkle the pomegranate seeds and pistachios over the top and finish with a drizzle of olive oil.

Time 1h5m

Yield 6 servings

Number Of Ingredients 16

2 red peppers, cored and cut into 1-inch wide strips
2 zucchini, quartered lengthwise and cut into 1-inch cubes
2 summer squash, quartered lengthwise and cut into 1-inch cubes
4 cremini mushrooms, halved
1 yellow onion, peeled and sliced into 1-inch strips
1/4 cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon dried Italian herb mix or herbs de Provence
1 pound penne pasta
3 cups marinara sauce (store bought or homemade)
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1 1/2 cups frozen peas, thawed
1/4 cup grated Parmesan, plus 1/3 cup for topping
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 450 degrees F.
  • On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
  • In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
  • Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

Time 1h

Yield 4

Number Of Ingredients 15

1 pint grape tomatoes
1 bunch asparagus, trimmed and chopped
1 medium zucchini, halved lengthwise and cut in 1/4 inch slices
1 medium yellow onion, chopped
1 medium red bell pepper, chopped
1 ear fresh sweet corn, kernels cut from the cob
4 tablespoons extra-virgin olive oil, or as needed
1 teaspoon red pepper flakes
sea salt and freshly cracked black pepper to taste
1 (16 ounce) package block feta cheese
4 sprigs fresh thyme
1 (16 ounce) package rigatoni pasta
½ medium lemon
¼ bunch fresh parsley, chopped
1 tablespoon grated Pecorino Romano cheese, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine grape tomatoes, asparagus, zucchini, onion, bell pepper, and corn kernels in a baking dish large enough to accommodate all vegetables. Drizzle generously with olive oil and sprinkle with pepper flakes as well as a hit of salt and pepper. Toss to coat and make a well in the center of the dish. Place feta blocks in the well and drizzle with more olive oil. Season feta with salt, pepper, and a pinch of pepper flakes. Nestle thyme sprigs into the veggies around the dish.
  • Bake uncovered in the preheated oven until vegetables are soft and feta is lightly browned, about 40 minutes.
  • When the vegetables and feta have cooked for 25 minutes, bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain, reserving 1 cup of pasta water. Set aside.
  • When the vegetables and feta are finished cooking, turn the broiler to 500 degrees F (260 degrees C) and broil vegetables for 1 minute for some final browning.
  • Squeeze lemon over vegetables and feta and stir in fresh parsley. Stir in rigatoni and reserved pasta water to help feta coat pasta evenly. Season with salt and pepper as needed and sprinkle with Pecorino Romano cheese.

PENNE WITH BROILED VEGETABLES AND FETA CHEESE

Penne with Broiled Vegetables and Feta Cheese image

Categories     Salad     Cheese     Pasta     Vegetable     Side     Broil     Picnic     Quick & Easy     Feta     Mint     Zucchini     Winter     Bon Appétit     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield 2 servings; can be doubled

Number Of Ingredients 6

1/2 pound penne pasta
2 small zucchini, quartered lengthwise, cut into 2-inch strips
1 medium-size red bell pepper, cut into 2x1/2-inch strips
1/2 cup bottled balsamic vinaigrette
1/2 cup crumbled garlic-and-herb feta cheese (about 2 ounces)
2 tablespoons chopped fresh mint

Steps:

  • Preheat broiler. Cook pasta in pot of boiling salted water until just tender but still firm to bite. Drain pasta and place in large bowl.
  • Meanwhile, combine zucchini and bell pepper in medium bowl. Add 3 tablespoons vinaigrette and toss to coat. Arrange vegetables on broiler pan; sprinkle with pepper. Broil vegetables until just tender and beginning to brown, stirring occasionally, about 10 minutes.
  • Add vegetables to bowl with pasta. Mix in remaining vinaigrette, cheese and mint. Season with salt and pepper.

Tips:

  • Choose firm vegetables for roasting. Vegetables like broccoli, carrots, zucchini, and bell peppers hold their shape well when roasted. Softer vegetables, like tomatoes and mushrooms, can be added towards the end of roasting to prevent them from getting too mushy.
  • Toss the vegetables in olive oil and seasonings before roasting. This will help them to brown and caramelize, and it will also add flavor.
  • Roast the vegetables at a high temperature. This will help them to cook quickly and evenly.
  • Keep an eye on the vegetables while they are roasting. You may need to stir them occasionally to prevent them from burning.
  • Serve the roasted vegetables immediately. They are best when they are hot and crispy.

Conclusion:

This recipe for penne with broiled vegetables and feta cheese is a delicious and healthy meal that is perfect for a weeknight dinner. The roasted vegetables are flavorful and colorful, and the feta cheese adds a creamy, tangy flavor. This dish is also easy to make, and it can be tailored to your own preferences. For example, you can use different types of vegetables, or you can add a different type of cheese.
